Tess Mallos
Tess Mallos (née Anastasia Calopades) (25 January 1933 – 31 July 2012) was an Australian food and cooking writer, journalist, author, and Pundit (expert), commentator. She wrote a number of books on Greek cuisine, Greek and Middle Eastern cuisine. Biography Her parents, both from the Greek island of Kythera, emigrated to Australia where she was born and raised in the country town of Casino, New South Wales. Her father, Andonis Calopades arrived in Australia at the turn of the 20th century as an 11-year-old, and worked in the famous Kominos cafe in the central business district of Sydney. In 1919, he moved to Casino, where he ran the Marble Bar Cafe. Her mother was Calliope Manolliaras. Mallos began her writing career in cooking as a freelance food consultant in advertising, creating and writing recipes for a wide range of food as well as preparing food for photography. Sydney
Sydney ( ) is the capital city of the state of New South Wales, and the most populous city in both Australia and Oceania. Located on Australia's east coast, the metropolis surrounds Sydney Harbour and extends about towards the Blue Mountains to the west, Hawkesbury to the north, the Royal National Park to the south and Macarthur to the south-west. Sydney is made up of 658 suburbs, spread across 33 local government areas. Residents of the city are known as "Sydneysiders". North Africa
North Africa, or Northern Africa is a region encompassing the northern portion of the African continent. There is no singularly accepted scope for the region, and it is sometimes defined as stretching from the Atlantic shores of Mauritania in the west, to Egypt's Suez Canal. Varying sources limit it to the countries of Algeria, Libya, Morocco, and Tunisia, a region that was known by the French during colonial times as "''Afrique du Nord''" and is known by Arabs as the Maghreb ("West", ''The western part of Arab World''). The United Nations definition includes Morocco, Algeria, Tunisia, Libya, Egypt, Sudan, and the Western Sahara, the territory disputed between Morocco and the Sahrawi Republic. The Middle East ( ar, الشرق الأوسط, ISO 233: ) is a geopolitical region commonly encompassing Arabian Peninsula, Arabia (including the Arabian Peninsula and Bahrain), Anatolia, Asia Minor (Asian part of Turkey except Hatay Province), East Thrace (European part of Turkey), Egypt, Iran, the Levant (including Syria (region), Ash-Shām and Cyprus), Mesopotamia (modern-day Iraq), and the Socotra Governorate, Socotra Archipelago (a part of Yemen). Central Business District
A central business district (CBD) is the commercial and business centre of a city. It contains commercial space and offices, and in larger cities will often be described as a financial district. Geographically, it often coincides with the "city centre" or "downtown". However, these concepts are not necessarily synonymous: many cities have a central ''business'' district located away from its commercial and or cultural centre and or downtown/city centre, and there may be multiple CBDs within a single urban area.
