Simnel Cake
Simnel cake is a fruitcake widely eaten in the United Kingdom, Ireland and other countries with patterns of migration from them, associated with Lent and Easter. It is distinguished by layers of almond paste or marzipan, typically one in the middle and one on top, and a set of eleven balls made of the same paste. It was originally made for the fourth Sunday in Lent, also known as Laetare Sunday, the Refreshment Sunday of Lent (when the 40-day fast would be relaxed), Mothering Sunday, the Sunday of the Five Loaves, or Simnel Sunday; named after the cake. In the United Kingdom it is now commonly associated with Easter Sunday. Decoration Conventionally, 11 marzipan balls are used to decorate the cake, symbolising the 12 apostles minus Judas Iscariot, or occasionally 12 are used, representing Jesus and the 11 apostles. Simnel Cake, 1869
Lambert Simnel (c. 1477 – after 1534) was a pretender to the throne of England. In 1487, his claim to be Edward Plantagenet, 17th Earl of Warwick, threatened the newly established reign of Henry VII (1485–1509). Simnel became the figurehead of a Yorkist rebellion organised by John de la Pole, Earl of Lincoln. The rebellion was crushed in 1487. Simnel was pardoned because of his tender years, and was thereafter employed by the Royal household as a scullion, and, later, as a falconer. Early life Simnel was born around 1477. His real name is not known—contemporary records call him John, not Lambert, and even his surname is suspect. John De Garlande
Johannes de Garlandia or John of Garland was a medieval grammarian and university teacher. His dates of birth and death are unknown, but he probably lived from about 1190 to about 1270. He was born in England, and studied at Oxford and then at the medieval University of Paris, where he was teaching by 1220. Ronald Hutton
Ronald Edmund Hutton (born 19 December 1953) is an English historian who specialises in Early Modern Britain, British folklore, pre-Christian religion and Contemporary Paganism. He is a professor at the University of Bristol, has written 14 books and has appeared on British television and radio. He held a fellowship at Magdalen College, Oxford, and is a Commissioner of English Heritage. Zest is a food ingredient that is prepared by scraping or cutting from the rind of unwaxed citrus fruits such as lemon, orange, citron, and lime. Zest is used to add flavor to foods.
