Sangza
Sangza ( ug, ساڭزا, ; zh, s=馓子, t=饊子, p=sǎn zi, zhu=ㄙㄢˇ ·ㄗ, IPA: , Xiao'erjing: صًا ذِ) is a popular snack in north of China, consisting of deep-fried noodles in a twisted pyramid shape. The snack is made by pulling wheat flour dough into thin ropes, which are deep-fried. Bunches of the ropes are then shaped into rings, which are stacked into a pyramid. Sangza is also eaten in other areas of China where the Hui minority live. Signature ingredients include roasted mutton, kebabs, and rice. Because of the Muslim population, the food is predominantly halal. Xinjiang cuisine is found throughout much of China, as migrants from the region often open Xinjiang restaurants or food stands in other regions. Xiao'erjing or Xiao'erjin or Xiaor jin or in its shortened form, Xiaojing, literally meaning "children's script" or "minor script" (cf. "original script" referring to the original Perso-Arabic script; zh, s=本经, t=本經, p=Běnjīng, Xiao'erjing: , dng, Бынҗин, ), is the practice of writing Sinitic languages such as Mandarin (especially the Lanyin, Zhongyuan and Northeastern dialects) or the Dungan language in the Perso-Arabic script. Hui People
The Hui people ( zh, c=, p=Huízú, w=Hui2-tsu2, Xiao'erjing: , dng, Хуэйзў, ) are an East Asian ethnoreligious group predominantly composed of Chinese-speaking adherents of Islam. They are distributed throughout China, mainly in the northwestern provinces and in the Zhongyuan region. According to the 2011 census, China is home to approximately 10.5 million Hui people. The 110,000 Dungan people of Kazakhstan and Kyrgyzstan are also considered part of the Hui ethnicity. The Hui have a distinct connection with Islamic culture.
