Sandwich bread (also referred to as sandwich loaf) is bread that is prepared specifically to be used for the preparation of sandwiches. Sandwich breads are produced in many varieties, such as white, whole wheat, sourdough, rye, multigrain and others. Sandwich bread is overwhelmingly commercially baked and pre-sliced, though any similar shaped loaf can be turned into sandwiches by hand. It may be formulated to slice easily, cleanly or uniformly, and may have a fine crumb (texture) and light body. Sandwich bread may be designed to have a balanced proportion of crumb and crust, whereby the bread holds and supports fillings in place and reduces drips and messiness. Some may be designed to not become crumbly, hardened, dried or have too compressible a texture. Pepperidge Farm
Pepperidge Farm is an American commercial bakery founded in 1937 by Margaret Rudkin, who named the brand after her family's 123-acre farm property in Fairfield, Connecticut, which had been named for the pepperidge tree. A subsidiary of the Campbell Soup Company since 1961, it is based in Norwalk, Connecticut. History Margaret Rudkin began baking bread in 1937 for her youngest son, Mark, who had asthma and was allergic to most commercially processed foods. Her son's doctor recommended the bread to his other patients and encouraged her to sell it to the public. Her first commercial sale was to her local grocer in Fairfield, Conn., Mercurio’s Market. Pullman Loaf
The Pullman loaf, sometimes called the "sandwich loaf" or "pan bread", is a rectangular loaf of white bread baked in a long, narrow, lidded pan. The French term for this style of loaf is ''pain de mie'', or, less commonly, ''pain anglais''. European breadmakers began using square lidded pans in the early 18th century to minimize crust. Railway service pioneer George Pullman chose the loaf for use on his Pullman railcars for efficiency reasons. Three Pullman loaves occupied the same space as two standard round-topped loaves, thus maximizing the use of space in the small Pullman kitchen.
