Sumbala
Sumbala or soumbala is a fermented seed condiment used widely across West Africa. It is usually prepared by women over the course of several days, traditionally from ''néré'' (''Parkia biglobosa'') seeds. It can be made from other kinds of seeds, such as those of ''Prosopis africana'', and the use of soybeans for this purpose is increasing due mainly to inadequate supply of néré seeds. It is comparable to miso paste. The fabrication process involves boiling, cleaning and then packing away to ferment - the fermentation process giving it a pungent smell. Salt can be added to the finished product to facilitate storage life. This condiment is traditionally sold in balls or patties that can be kept for several months at a time in the case of the best quality. It is a traditional ingredient used across West Africa. Parkia Biglobosa
''Parkia biglobosa'', known in English as the African locust bean, is a perennial deciduous tree in the family Fabaceae. It is found in a wide range of environments in Africa and is primarily grown for its pods that contain both a sweet pulp and valuable seeds. Where the tree is grown, the crushing and fermenting of these seeds constitutes an important economic activity. Various parts of the locust bean tree are used for medicinal and food purposes. As a standing tree, locust bean may have a positive effect on the yield of other nearby crops. Iru (food)
Irú (Yoruba) or Eware (Edo) is a type of fermented and processed locust beans (''Parkia biglobosa'') used as a condiment in cooking. It is similar to ogiri and douchi. It is very popular among the Yoruba people and Edo people of Nigeria. It is used in cooking traditional soups like egusi soup, okro soup, Ewedu soup and ogbono soup. Among the Manding-speaking people of West Africa irú is known as sumbala. The Yorubas classify iru into two types: Irú Wooro which is commonly use in making stew and Irú pẹ̀tẹ̀ which is used in making ewedu and egusi soup. It can be found fresh or dried. The fresh variety is usually wrapped in moimoi leaves, which are similar in appearance and texture to banana leaves. It has a very pungent smell. Mooré
The Mossi language (Mooré) is a Gur language of the Oti–Volta branch and one of two official regional languages of Burkina Faso. It is the language of the Mossi people, spoken by approximately 8 million people in Burkina Faso, Ghana, Cote d’Ivoire, Benin, Niger, Mali, Togo and Senegal as a native language, but with many more L2 speakers. Mooré is spoken as a first or second language by over 50% of the Burkinabè population and is the main language in the capital city of Ouagadougou. Dagbani (or Dagbane), also known as Dagbanli and Dagbanle, is a Gur language spoken in Ghana and Northern Togo. Its native speakers are estimated around 3,160,000. It is a compulsory subject in primary and junior high school in the Dagbon Kingdom, which covers the eastern part of Ghana. Zarma Language
Zarma (also spelled Djerma, Jerma, Dyabarma, Dyarma, Dyerma, Adzerma, Zabarma, Zarbarma, Zarmaci or Zerma) is one of the Songhay languages. It is the leading indigenous language of the southwestern lobe of the West African nation of Niger, where the Niger River flows and the capital city, Niamey, is located.
