Single-barrel
Single barrel whiskey (or single cask whiskey) is a premium class of whiskey in which each bottle comes from an individual aging barrel, instead of coming from blending together the contents of various barrels to provide uniformity of color and taste. By contrast, some other whiskeys, even ones that are not blends, may be combined from more than one batch, or even from differing years to achieve consistency. The whiskey from each barrel is bottled separately, with each bottle bearing the barrel number and in most cases the dates for the beginning and end of aging. Each barrel is believed to contribute unique characteristics to the finished whiskey. There has been some recent controversy over whether single cask whiskeys are indeed all from single casks. Buffalo Trace Distillery
Buffalo Trace Distillery is a distillery in Frankfort, Kentucky, owned by the Sazerac Company. It has historically been known by several names, including the George T. Stagg Distillery and the Old Fashioned Copper (O.F.C.) Distillery. Its namesake bourbon brand, Buffalo Trace Kentucky Straight Bourbon whiskey, was introduced in August 1999. The company claims the distillery is the oldest continuously-operating distillery in the United States. The company says the name "Buffalo Trace" refers to an ancient buffalo crossing on the banks of the Kentucky River in Franklin County, Kentucky. The Sazerac Company purchased the distillery in 1992. Balvenie Distillery
The Balvenie distillery is a Speyside single malt Scotch whisky distillery in Dufftown, Scotland, owned by William Grant & Sons. History William Grant was born on 19 December 1839 in his father's house in Dufftown. At seven he began herding cattle at a farm on the upper reaches of the River Deveron. He was apprenticed to a shoemaker then worked as a clerk, and then became a bookkeeper at Mortlach distillery 1866. There he was appointed as a clerk and then manager and learned the distilling trade. After about twenty years, Grant left his job at the Mortlach distillery and bought a field near Balvenie Castle. Evan Williams is a brand of Kentucky straight bourbon whiskey bottled in Bardstown, Kentucky, by the Heaven Hill company. The product is aged for a minimum of four years (which is more than the two year minimum to be called 'straight' bourbon, but is the minimum requirement for a straight whiskey that does not have an age statement on the label). Bottled in bond is a label for an American-made distilled beverage that has been aged and bottled according to a set of legal regulations contained in the United States government's Standards of Identity for Distilled Spirits, as originally laid out in the Bottled-in-Bond Act of 1897. As a reaction to widespread adulteration in American whiskey, the act made the federal government the guarantor of a spirit's authenticity, gave producers a tax incentive for participating, and helped ensure proper accounting and the eventual collection of the tax that was due. Although the regulations apply to all spirits, most bonded spirits are whiskeys in practice.
