''Salt Fat Acid Heat: Mastering the Elements of Good Cooking'' is a 2017 cookbook written by American chef Samin Nosrat and illustrated by Wendy MacNaughton. The book was designed by Alvaro Villanueva. It inspired the 2018 American four-part cooking docu-series '' Salt Fat Acid Heat''. Contents A reference book, the cookbook is focused on teaching techniques and structured around the four titular elements: Salt, Fat, Acid, and Heat. The book explains what they are and how to master them in your cooking in order to become a better, more intuitive cook. Nosrat explains that these are the defining factors which determine the flavor and texture of food every time you cook, calling them the "cardinal directions" of cooking. The goal of the book is for readers to leave with a new cooking philosophy. Samin Nosrat ( fa, ثمین نصرت, , born November 7, 1979) is an American chef, TV host, food writer and podcaster. She is the author of the James Beard Award–winning, ''New York Times'' Bestselling cookbook '' Salt Fat Acid Heat'' and host of a Netflix docu-series of the same name. From 2017–2021, she was a food columnist for ''The New York Times Magazine.'' Nosrat is also the co-host of the podcast ''Home Cooking.'' Early life and education Nosrat was born in San Diego, California. She was raised in University City, San Diego and attended La Jolla High School. Her parents emigrated from Iran to the United States in 1976, fleeing state sanctioned persecution of Baháʼís. The James Beard Foundation Awards are annual awards presented by the James Beard Foundation to recognize chefs, restaurateurs, authors and journalists in the United States.
