Southwestern Indian Polytechnic Institute (SIPI) is a public tribal land-grant community college in unincorporated Bernalillo County, New Mexico, with an Albuquerque postal address. It is federally operated by the Bureau of Indian Affairs and funded through the Bureau of Indian Education, both agencies within the United States Department of the Interior. More than 120 different Indian Tribes are represented in SIPI's student body. History The Southwestern Indian Polytechnic Institute was conceived by the All Indian Pueblo Council, who envisioned a post-secondary school that could serve the Native American community. Collective efforts with tribal leaders, public officials, and interested citizens, resulted in the school's founding in 1971; dedication ceremonies were held on August 21, 1971. Mutton Flaps
Mutton flaps, or breast of lamb, are an inexpensive cut of meat from a sheep. They consist of rib meat and are considered a low-quality meat in Western countries, contrary to pork and beef ribs. They are described there as a "tough, scraggy meat", if not well cooked. In recent years their high fat content has made them unpopular in many Western countries, although they are widely used as döner meat in Europe. They are a popular staple in the South Pacific where their high fat content has been associated with the development of obesity problems. In 2000, Fiji banned their import. Since July 1, 2020, Tonga has banned the import of mutton flaps from New Zealand, claiming they play a major role in increasing obesity among the population.
