New Danish Cuisine
New Nordic Cuisine ( da, Det nye nordiske køkken, sv, Det nya nordiska köket, no, Det nye nordiske kjøkken, fi, Uusi pohjoismainen keittiö) is a culinary movement which has been developed in the Nordic countries, and Scandinavia in particular, since the mid-2000s. New Nordic Cuisine was propelled by, and found inspiration in, ideas and a manifesto written by food activist and entrepreneur Claus Meyer and a number of Scandinavian chefs in 2004 in Copenhagen. New Nordic Cuisine has been used to promote local, natural and seasonal produce as a basis for new dishes both in restaurants and in the home. Fäviken
Fäviken was a restaurant located in Åre Municipality, Jämtland, Sweden. It was run by chef Magnus Nilsson between 2008 and 2019. The food served at the restaurant was localised to the estates around the restaurant, with only a handful of exceptions. Fäviken was placed in The World's 50 Best Restaurants in 2012, and named as one of the top ten restaurants in the world by the ''Zagat'' guide in 2013. Magnus Nilsson (chef)
Magnus Nilsson (born 28 November 1983) is a Swedish chef who was head chef at the restaurant Fäviken in Sweden until it closed in December of 2019. He had previously worked at L'Astrance and L'Arpège in France, before moving onto Fäviken in 2008, which was ranked the 57th best restaurant in the world and won two Michelin stars in 2016. Career Although a family story is told of Nilsson cooking his first meal at the age of three, his first culinary memory is of chopping cucumbers at his grandmother's farm.
