Maltese cuisine reflects Maltese history; it shows strong Italian influences as well as influences from Spanish, French, Provençal, and other Mediterranean cuisines, with some later British culinary influence. Having to import most of its foodstuffs, being positioned along important trade routes, and having to cater for the resident foreign powers who ruled the islands, opened Maltese cuisine to outside influences. The traditional Maltese stewed rabbit (''stuffat tal-fenek'') is often identified as the national dish. History Malta's history and geography had an important influence on its cuisine. History Of Malta
Malta has a long history and was first inhabited in around 5900 BC. The first inhabitants were farmers, and their agricultural methods degraded the soil until the islands became uninhabitable. The islands were repopulated around 3850 BC by a civilization which at its peak built the Megalithic Temples, which today are among the oldest surviving buildings in the world. Their civilization collapsed in around 2350 BC, but the islands were repopulated by Bronze Age warriors soon afterwards. Malta's prehistory ends in around 700 BC, when the islands were colonized by the Phoenicians. They ruled the islands until they fell in 218 BC to the Roman Republic. The island was acquired by the Eastern Romans or Byzantines in the 6th century AD, who were expelled by Aghlabids following a siege in 870 AD. Flatbread
A flatbread is a bread made with flour; water, milk, yogurt, or other liquid; and salt, and then thoroughly rolled into flattened dough. Many flatbreads are unleavened, although some are leavened, such as pizza and pita bread. Flatbreads range from below one millimeter to a few centimeters thick so that they can be easily eaten without being sliced. Ġbejna
Ġbejna (, plural ''ġbejniet'') is the diminutive of the Maltese word ġobna, which means "cheese"; it is synonymous with the Maltese English word "cheeselet", i.e. "little cheese". The rest of the article describes 'Ġbejna tan-nagħaġ', a type of Maltese cheeselet made in Malta and Gozo. Ġbejna tan-nagħaġ is a small round cheese made in Malta from sheep milk, salt and rennet. Maqrut
Imqaret () are traditional Maltese sweets made with pastry and a filling of dates. The word imqaret in Maltese, is the plural of maqrut (diamond-shaped) and it signifies the diamond shape of the sweets – even though in many cases they are sold in a rectangular shape. They are very popular in Malta and they are sold in street markets, as well as in village feasts, in some cases served with ice-cream. During preparation the imqaret are deep fried and are usually infused with the flavours of aniseed and bay leaf. The imqaret are prepared individually by folding the pastry, in the centre of which a quantity of filling is placed.
