Makalo
Makalo ( mk, Макало) is a traditional Macedonian side dish. The main ingredients include oil, garlic and peppers although variations in the recipe can also include dry embroidered peppers, mashed potatoes, aubergine, leek and onion. It is usually served as an addition to stews or as a spread on bread. Etymology The name makalo comes from the Macedonian verb "to dip" ( mk, мака, transliterated as maka) to describe how this side dish is usually used. There are several variations of the dish in North Macedonia, including the one from Ohrid, ''lukarnik'' which is served in the town of Veles. Macedonian cuisine ( mk, Македонска кујна, Makedonska kujna) is the traditional cuisine of North Macedonia. It is influenced by Balkan cuisines. The relatively warm climate of the country provides excellent growth conditions for a variety of vegetables, herbs and fruits. Balkan Cuisine
Balkan cuisine is a type of regional cuisine that combines characteristics of European cuisine with some of those from Western Asia. It is found in the Balkan Peninsula of Southeast Europe, a region without clear boundaries but which is generally considered to at least include the modern countries of Albania, Bulgaria, Romania and Greece and the former Yugoslavia, with the possible exception of Slovenia and northern inland regions of Croatia. Veles, North Macedonia
Veles ( mk, Велес ) is a city in the central part of North Macedonia on the Vardar river. The city of Veles is the seat of Veles Municipality. Veles is the sixth largest Macedonian city with a total population of 43,716 (census 2002). Ohrid
Ohrid ( mk, Охрид ) is a city in North Macedonia and is the seat of the Ohrid Municipality. It is the largest city on Lake Ohrid and the List of cities in North Macedonia, eighth-largest city in the country, with the municipality recording a population of over 42,000 inhabitants as of 2002.
