Maredsous Cheese
Maredsous is a semi-hard loaf-shaped washed-rind cheese made from cow's milk. It is suitable for slicing, and characterised by an orange coloured rind. The cheese has been produced at Maredsous Abbey in Belgium since 1953. The cheese is lightly pressed, then washed in brine to create the firm, orange crust and pungent aroma. Each cheese is washed by hand every two days, starting with the older cheeses. The water used for the washing of the older cheeses picks up the appropriate bacteria which are then transferred to the younger cheeses when the same water is used for washing these. The maturing process in the cellar takes place over 22 days. Maredsous is now an industrially produced cheese, produced by Groupe Bel. Maredsous Abbey
Maredsous Abbey is a Benedictine monastery at Maredsous, in the municipality of Anhée, Wallonia, Belgium. It is a founding member of the Annunciation Congregation of the Benedictine Confederation. The abbey was founded as a priory on 15 November 1872 by Beuron Abbey, with the financial support of the Desclée family, who donated some land and paid for the plans and construction of the buildings which were designed by Jean-Baptiste Bethune. In 1878, the priory was raised to the status of abbey by Pope Leo XIII and became a member of the Congregation of Beuron. The abbey was subsequently affiliated with the Congregation of the Annunciation within the Benedictine confederation, 1920. Washed-rind Cheese
Washed-rind or smear-ripened cheeses are cheeses which are periodically treated with brine or mold-bearing agents. This encourages the growth of certain bacteria on their surface which give them distinctive flavors. There are hard and soft washed-rind cheeses. The softer ones are sometimes distinguished as "smear-ripened". Conversely, the term "washed rind" is sometimes reserved only for the hard ones. Curd is obtained by coagulating milk in a sequential process called curdling. It can be a final dairy product or the first stage in cheesemaking.
