Marbled Meat
Marbled meat is meat, especially red meat, that contains various amounts of intramuscular fat, giving it an appearance similar to marble. Important terms defined ''Beef quality grades'' - A quality grade is a composite evaluation of factors that affect palatability of meat ( tenderness, juiciness, and flavor). These factors include carcass maturity, firmness, texture, and color of lean, and the amount and distribution of marbling within the lean. Beef carcass quality grading is based on (1) degree of marbling and (2) degree of maturity. ''Marbling'' - (intramuscular fat) is the intermingling or dispersion of fat within the lean. Graders evaluate the amount and distribution of marbling in the ribeye muscle at the cut surface after the carcass has been ribbed between the 12th and 13th ribs. Degree of marbling is the primary determination of quality grade. ''Maturity'' refers to the physiological age of the animal rather than the chronological age. Because the chronological age ...

The sum of the first four prime numbers two + three + five + seven is the only sum of four consecutive prime numbers that yields an odd prime number, seventeen, which is the fourth super-prime. Four lies between the first proper pair of twin primes, three and five, which are the first two Fermat primes, like seventeen, which is the third. On the other ...

Piedmontese Beef
thumbnail, A Piedmontese bull The Piedmontese ( it, Piemontese, italic=no or ) is a breed of domestic cattle that originated in the region of Piedmont, in north-west Italy. The calves are born fawn coloured, and turn grey-white as they mature. Piedmontese cattle carry a unique gene mutation identified as an inactive myostatin allele that causes hypertrophic muscle growth, or double muscling. Purebred Piedmontese cattle are homozygous, meaning they have two identical alleles present for this unique gene. They have garnered attention from breeders of beef cattle in other parts of the world, including North and South America. A small group of select Piedmontese bulls and cows were imported into Canada in the late 1970s, and into the United States in the early 1980s, and were used as the foundation breeding stock to develop a new breed of beef cattle known as North American Piedmontese cattle. History Until the late nineteenth century there were numerous local types of Pied ...

Entrecôte
In French, ''entrecôte'' () is a premium cut of beef used for steaks and roasts. A traditional ''entrecôte'' is a boneless cut from the rib area corresponding to the steaks known in different parts of the English-speaking world as rib, rib eye, Scotch fillet, club, or Delmonico. The muscle group concerned is the ''longissimus dorsi'', which runs down the back of the animal adjacent to the vertebrae and above the rib cage, and continues into the hind quarter. Once past the rib cage into the area adjacent to the lumbar vertebrae, this muscle group is no longer called an "entrecôte"—at that point it becomes a sirloin/strip steak (UK/N.Am, respectively), or a ''contre-filet'' in French. Boston Butt
A Boston butt is the slightly wedged shaped portion of the pork shoulder above the standard picnic cut which includes the blade bone and the "lean butt" (which is boneless), both extensions of the tenderloin cut and can be used in place of the tenderloin. Generally the pork shoulder is considered a primal cut with the picnic and butt sections being sub-primal cuts however, some sources do refer to the butt as a primary cut. The tenderloin is closer to the rear of the hog. The shoulder is at the front. The Boston butt gets its name simply from the fact that it is the wider end of the front shoulder. Butt is old English for “wide end” like the butt of a gun. Artificial Marbling
Artificial marbling is the injection of animal fat and/or vegetable oil into lean meat in order to simulate the appearance of marbling and attempt to improve the palatability of inexpensive cuts by preventing them from drying out or losing flavour during the freezing or cooking process. Lean cuts of beef are one common target of artificial marbling. The process may also be performed on pork. It has been described as a more technologically advanced form of larding. Names and labelling The Agri-Food and Veterinary Authority of Singapore labels artificially marbled beef as "beef tallow-injected further processed beef". Hokubee Australia markets its fat-injected beef product under the brand name Meltique, though its halal products use canola oil instead of fat, due to concerns about cross-contamination with pork tallow. The United States Department of Agriculture requires that when fats and oils are added to red meat products such as roast beef and steaks, the product indicate this ...

Family Restaurant
Restaurants fall into several industry classifications, based upon menu style, preparation methods and pricing, as well as the means by which the food is served to the customer. This article mainly describes the situation in the USA, while categorisation differs widely around the world. Origin of categories Historically, ''restaurant'' referred only to places that provided tables where one ate while seated, typically served by a waiter. Following the rise of fast food and take-out restaurants, a retronym for the older "standard" restaurant was created, sit-down restaurant. Most commonly, "sit-down restaurant" refers to a casual-dining restaurant with table service, rather than a fast food restaurant or a diner, where one orders food at a counter. Sit-down restaurants are often further categorized, in North America, as "family-style" or " formal". In British English, the term ''restaurant'' almost always means an eating establishment with table service, so the "sit down" quali ...

Red Meat
In gastronomy, red meat is commonly red when raw and a dark color after it is cooked, in contrast to white meat, which is pale in color before and after cooking. In culinary terms, only flesh from mammals or fowl (not fish) is classified as red or white.Larousse Gastronomique, first edition In nutritional science, ''red meat'' is defined as any meat that has more of the protein myoglobin than white meat. White meat is defined as non-dark meat from fish or chicken (excluding the leg or thigh). Definition Under the culinary definition, the meat from adult or "gamey" mammals (for example, beef, horse meat, mutton, venison, boar, hare) is red meat, while that from young mammals (rabbit, veal, lamb) is white. Poultry is white. Most cuts of pork are red, others are white. Game is sometimes put in a separate category altogether. (French: ''viandes noires'' — "dark meats".) Some meats (lamb, pork) are classified differently by different writers. According to the United States ...
