Lower Saxon Cuisine
Lower Saxon cuisine (german: Niedersächsische Küche) covers a range of regional, North German culinary traditions from the region correspondingly broadly to the state of Lower Saxony, which in many cases are very similar to one another, for example cuisine from the areas of Oldenburg, Brunswick, or East Frisia. It is mainly indigenous and in some cases very hearty. Vegetables and accompaniments The most common accompaniment is potato, which is prepared in a variety of ways, especially as ''Salzkartoffel'' or boiled potatoes. A popular vegetable, very typical of the area, is kale or '' Grünkohl'', known regionally, especially in Bremen and Brunswick Land as '' Braunkohl''. Lower Saxony (german: Niedersachsen ; nds, Neddersassen; stq, Läichsaksen) is a German state (') in northwestern Germany. Lake Steinhude, german: Steinhuder Meer, , is a lake in Lower Saxony, Germany located northwest of Hanover. Named after the nearby village of Steinhude, it has an area of about , making it the largest lake of northwestern Germany. At the same time, Lake Steinhude is very shallow, with an average depth of only and a maximum depth of less than . It lies within a region known as the Hanoverian Moor Geest. Geology It is part of the glacial landscape formed after the recession of the glaciers of the latest Ice Age, the Weichselian glaciation. The European eel (''Anguilla anguilla'') is a species of eel, a snake-like, catadromous fish. They are normally around and rarely reach more than , but can reach a length of up to in exceptional cases. The Ems (german: Ems; nl, Eems) is a river in northwestern Germany. Weser
The Weser () is a river of Lower Saxony in north-west Germany. It begins at Hannoversch Münden through the confluence of the Werra and Fulda. It passes through the Hanseatic city of Bremen.
