Louisa Shafia
Louisa Shafia (born 1969 or 1970) is an American chef and cookbook author. Her 2009 cookbook ''Lucid Food'' focuses on local and sustainable eating. ''The New Persian Kitchen'' (2013) features traditional Persian dishes as well as reinterpretations. Biography Early life Shafia was born in 1969 or 1970 to Georgia and Hass Shafia (d. 2023). Shafia's mother, who is Ashkenazi Jewish, grew up in Philadelphia, Pennsylvania, and is president of a Philadelphia-based building maintenance company. Her father was born in a Muslim family in Iran. After graduating from medical school, he emigrated to the United States in 1961 and changed his last name and permanently separated from his family. Shafia attended the Germantown Friends School in Philadelphia and later graduated from the University of Pennsylvania. Local food is food that is produced within a short distance of where it is consumed, often accompanied by a social structure and supply chain different from the large-scale supermarket system. Local food (or "locavore") movements aim to connect food producers and consumers in the same geographic region, to develop more self-reliant and resilient food networks; improve local economies; or to affect the health, environment, community, or society of a particular place. Ten Speed Press is a publishing house founded in Berkeley, California in 1971 by Phil Wood. Ten Speed Press was bought by Random House in February 2009 and is now part of their Crown Publishing Group division. History Wood worked with Barnes & Noble in 1962, Penguin Books in 1965, and had a senior sales position at Penguin Books in Baltimore and New York before founding Ten Speed Press. Wood died of cancer in December 2010. Ten Speed's first book was ''Anybody’s Bike Book'', which is still in print. It inspired the publisher's name and has sold more than a million copies. Free range denotes a method of farming husbandry where the animals, for at least part of the day, can roam freely outdoors, rather than being confined in an enclosure for 24 hours each day.
