Kazan (cookware)
A kazan or qazan is a type of large cooking pot used throughout Central Asia, Afghanistan, Azerbaijan, Turkey, and the Balkan Peninsula, roughly equivalent to a cauldron, boiler, or Dutch oven. They come in a variety of sizes (small modern cooking pots are sometimes referred to as kazans), and are often measured by their capacity, such as "a 50-litre kazan". Usually their diameter is half a meter. Kazans are made of cast iron or in modern times aluminum and are used to cook a wide variety of foods, including ''plov'' (pilaf), sumalak, shorpa, kesme, and bawyrsaq, and as such are an important element in celebrations when food must be prepared for large numbers of guests. Kazans may be suspended over a fire in a variety of ways. Samanu ( fa, سمنو / ''samanu''; az, səməni halvası), Samanak ( fa, سمنک / ''samanak''), Sümelek ( kk, сүмелек / tm, Sümelek / ''Syumelek''), Sumanak ( tg, суманак), Sumalak ( uz, sumalak ) or Sümölök ( ky, сүмөлөк ) is a sweet paste made from germinated wheat (young wheatgrass) and wheat flour, which is prepared especially for Nowruz (beginning of spring) in a large pot (like a kazan). This practice has been traced back to the pre-Islamic Sasanian Persian Empire. Although Samanu is prominent for " Haft-Sin" (the seven symbolic items traditionally displayed at Nowruz), the preparation "mela" (referring to a picnic) and eating it is traditional in Afghanistan. The wheat is soaked and prepared for days and so the entire process takes up to a week. Bawyrsaq
Boortsog or bawïrsaq ( ba, бауырһаҡ, kk, бауырсақ; baýyrsaq , ky, боорсок , mn, боорцог , uz, boʻgʻirsoq , tr, kabarcık, pişi, bişi, tuzlu lokma, halka, tk, pişme) is a type of fried dough food found in the cuisines of Central Asia, Idel-Ural, Mongolia and the Middle East. It is shaped into either triangles or sometimes spheres. The dough consists of flour, yeast, milk, eggs, butter, salt, sugar, margarine. Tajik boortsog are often decorated with a criss-cross pattern by pressing the bottom of a small strainer on the dough before it is fried. Boortsog is often eaten as a dessert, with syrup or jam or honey. They may be thought of as cookies or biscuits, and since they are fried, they are sometimes compared to doughnuts. Janissary
A Janissary ( ota, یڭیچری, yeŋiçeri, , ) was a member of the elite infantry units that formed the Ottoman Sultan's household troops and the first modern standing army in Europe. The corps was most likely established under sultan Orhan (1324–1362), during the Viziership of Alaeddin. Janissaries began as elite corps made up through the devşirme system of child levy, by which Christian Albanians, Romanians, Armenians, Bulgarians, Croats, Greeks and Serbs were taken, levied, subjected to circumcision and conversion to Islam, and incorporated into the Ottoman army. Codex Cumanicus
The Codex Cumanicus is a linguistic manual of the Middle Ages, designed to help Catholic missionaries communicate with the Cumans, a nomadic Turkic people. It is currently housed in the Library of St. Mark, in Venice (BNM ms Lat. Z. 549 (=1597)). The Codex was created in Crimea and is considered one of the oldest monuments of the Crimean Tatar language, which is of great importance for the history of Kypchak and Oguz dialects — as directly related to the Kypchaks (Polovtsy, Kumans) of the Black Sea steppes and particularly the Crimean peninsula. Middle Turkic (''Türki'' or ''Türkçe'') refers to a phase in the development of the Turkic language family, covering much of the Middle Ages (c. 900–1500 CE).
