Kraftkar
Kraftkar is a blue cheese from Tingvoll in Nordmøre, Western Norway, made from unskimmed cow's milk and cream, with injected culture of the mold '' Penicillium roqueforti''. The name ''Kraftkar'' ("strongman") relates to the legendary farmhand Tore Nordbø and his supernatural strength and size. History Produced by the cheesemaker Tingvollost, Kraftkar was first introduced in 2004. Awards Kraftkar was awarded gold medal for blue cheese at the World Cheese Awards in 2011, gold medal at the International Cheese Awards in 2013, and silver medal at the 2015 World Cheese Awards. At the 2016 World Cheese Awards in San Sebastián, Kraftkar was selected "World Champion" (all categories), among more than 3,000 participating cheeses from 35 countries. Tingvollost
Tingvollost (established in 2003) is a Norwegian cheesemaker in Tingvoll, making blue cheese and types of cheese#Mold, white mold cheeses from cow's milk. Annual production in 2014 was 21 tons of cheese based on 200 000 liters milk. Perhaps best known is the Kraftkar blue cheese that became World Champion in ''World Cheese Awards'' 2016. It first won the national championship in 2009 as well as medaled in the Nordic Cheese Competition in Denmark. It won gold in ''World Cheese Awards'' 2011, in which year they also brought home the national and nordic gold. The next year they again won Nordic, beating the ''Svedjan'' and ''Kastrup''. Tingvoll is a municipality in Møre og Romsdal county, Norway. It is part of the Nordmøre region. The administrative centre is the village of Tingvollvågen. Nordmøre (English: North- Møre) is a traditional district in the Norwegian county of Møre og Romsdal. The area comprises the northern third of the county including the municipalities of Kristiansund, Averøy, Tingvoll, Surnadal, Aure, Halsa, Eide, Sunndal, Gjemnes, and Smøla. ''Penicillium roqueforti'' is a common saprotrophic fungus in the genus ''Penicillium''. Widespread in nature, it can be isolated from soil, decaying organic matter, and plants. The major industrial use of this fungus is the production of blue cheeses, flavouring agents, antifungals, polysaccharides, proteases, and other enzymes. The fungus has been a constituent of Roquefort, Stilton, Danish blue, Cabrales, Gorgonzola, and other blue cheeses. Other blue cheeses are made with ''Penicillium glaucum''.
