José Maria Da Fonseca
José Maria da Fonseca, also known as JM da Fonseca, is the oldest table wine company in Portugal, though some Port wine houses pre-date it. The family-owned company was founded in 1834 and is based in the village of Azeitão on the Setúbal Peninsula. It is now in its 7th generation and most of its production is exported internationally. Among its best known wine brands are ''Periquita'' and ''Lancers''. History José Maria da Fonseca started the business in 1834, and the family has maintained it since then. In addition to its vineyards on the Setúbal peninsula, the company operates a number of vineyards in the Alentejo and Douro Valley regions. The company's winery based in the Alentejo town of Reguengos de Monsaraz, uses the ancient Roman tradition of fermenting wine in clay pots along with modern technology. Fermenting Wine
The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During fermentation, yeasts transform sugars present in the juice into ethanol and carbon dioxide (as a by-product). In winemaking, the temperature and speed of fermentation are important considerations as well as the levels of oxygen present in the must at the start of the fermentation. The risk of stuck fermentation and the development of several wine faults can also occur during this stage, which can last anywhere from 5 to 14 days for ''primary fermentation'' and potentially another 5 to 10 days for a '' secondary fermentation''. Moscatel De Setúbal
Muscatel ( ) is a type of wine made from muscat grapes. The term is now normally used in the United States to refer to a fortified wine made from these grapes rather than just any wine made from these grapes. This fortified muscatel became popular in the United States when, at the end of prohibition, in order to meet the large demand for wine, some poor strains of muscat grapes (used normally for table grapes or raisins) mixed with sugar and cheap brandy were used to produce what has since become infamous as a wino wine. This kind of fortified wine has, in the United States, damaged the reputation of all muscat-based wines and the term muscatel tends no longer to be used for these "better" wines in the United States. Castelão (grape)
Castelão, in Portugal also known as Periquita and João de Santarém, is a red wine grape found primarily in the south coastal regions but is grown all over Portugal and is sometimes used in Port wine production. The vine thrives in sandy soils but is able to adapt to a variety of conditions. It produces a wine that can be harshly tannic in its youth but softens as it ages. In the Algarve VR, it is often blended with Negra Mole to produce a wine with less aging potential but less harsh in its youth.J. Lancers (wine)
Lancers is a brand of medium-sweet, lightly sparkling wine produced by the JM da Fonseca winery in Portugal. The brand was created in 1944, when Vintage Wines of New York predicted that wine consumption in the United States would increase after World War II. A sparkling Lancers, made by the continuous method, was introduced in the late 1980s.
