Joel Kissin
Joel Kissin, originally from New Zealand, is a restaurateur who was the co-founder, managing director and shareholder of Conran Restaurants (now D&D London). Kissin has been involved in opening a dozen restaurants in London and New York. Restaurants Kissin met Sir Terence Conran in 1986 whilst running the restaurant Hilaire. In 1987, Conran asked Kissin to join Simon Hopkinson, Hilaire's chef, to help launch Bibendum in The Michelin Building. In addition to managing the restaurant and oyster bar, Kissin created an award-winning wine list for the restaurant. After Bibendum, Kissin joined Conran at his new development in Butler's Wharf. Kissin and Conran first created Le Pont de la Tour at Butler's Wharf comprising a restaurant, bar & grill, food shop, wine merchant, oil and spice shop and bakery. Xavier Marcel Boulestin
Xavier Marcel Boulestin (1878 – 20 September 1943) was a French chef, restaurateur, and the author of cookery books that popularised French cuisine in the English-speaking world. Born in Poitiers in France (Poitou region), Boulestin tried a number of occupations before finding his role as a restaurateur. He worked as secretary and ghostwriter to the author "Willy" (Henry Gauthier-Villars) in Paris, and then moved to London, where he made his home and career from 1906 onward. There, he opened an interior design shop, which failed to make enough money. He wrote extensively, and was commissioned to write a simple French cookery book for English readers. It was a huge success, and thereafter his career was in cooking. The Restaurant Boulestin, known as the most expensive in London, opened in 1927. Stephen Paul Bayley (born 13 October 1951) is a British writer and critic, known particularly for his commentary on architecture and design. Fay Goldie Maschler (''née'' Coventry; 15 July 1945) is a British journalist who was the restaurant critic of London's ''Evening Standard'' newspaper for nearly 50 years. She won a contest for the position in 1972, when her tenure was supposed to last for three months. In December 2020, the ''Evening Standard'' announced that Maschler would leave the role of its chief restaurant critic after 48 years, to be succeeded by Jimi Famurewa, but would continue as a contributor.
