Italian Sausage
In North America, Italian sausage (''salsiccia'' in Italian) most often refers to a style of pork sausage. The sausage is often noted for being seasoned with fennel as the primary seasoning. In Italy, however, a wide variety of sausages are made, many of which are quite different from the aforementioned product. The most common varieties marketed as "Italian sausage" in supermarkets are hot, sweet, and mild. The main difference between hot and mild is the addition of hot red pepper flakes to the spice mix of the former. The difference between mild and sweet is the addition of sweet basil in the latter. In Australia, a variety of mild ''salsiccia fresca'' (literally meaning "fresh sausage") seasoned primarily with fennel is sold as "Italian sausage". History Initially known as "lucanica", the first evidence of the sausage dates back to the 1st century BC, when the Roman historian Marcus Terentius Varro described stuffing spiced and salted meat into pig intestines, as follows: ...

Italian-American Culture In New York City
Italian Americans ( it, italoamericani or ''italo-americani'', ) are Americans who have full or partial Italian ancestry. The largest concentrations of Italian Americans are in the urban Northeast and industrial Midwestern metropolitan areas, with significant communities also residing in many other major US metropolitan areas. Between 1820 and 2004 approximately 5.5 million Italians migrated from Italy to the United States, in several distinct waves, with the greatest number arriving in the 20th century from Southern Italy. Initially, many Italian immigrants (usually single men), so-called “birds of passage”, sent remittance back to their families in Italy and, eventually, returned to Italy; however, many other immigrants eventually stayed in the United States, creating the large Italian-American communities that exist today. In 1870, prior to the large wave of Italian immigrants to the United States, there were fewer than 25,000 Italian immigrants in America, many of them ...

Marcus Terentius Varro
Marcus Terentius Varro (; 116–27 BC) was a Roman polymath and a prolific author. He is regarded as ancient Rome's greatest scholar, and was described by Petrarch as "the third great light of Rome" (after Vergil and Cicero). He is sometimes called Varro Reatinus to distinguish him from his younger contemporary Varro Atacinus. Biography Varro was born in or near Reate (now Rieti) to a family thought to be of equestrian rank, and always remained close to his roots in the area, owning a large farm in the Reatine plain, reported as near Lago di Ripasottile, until his old age. He supported Pompey, reaching the office of praetor, after having been tribune of the people, ''quaestor'' and ''curule aedile''. It is probable that Varro was discontented with the course on which Pompey entered when the First Triumvirate was formed, and he may thus have lost his chance of rising to the consulate. He actually ridiculed the coalition in a work entitled the ''Three-Headed Monster'' ( in th ...
