George Mavrothalassitis
George Mavrothalassitis is a chef and restaurateur known as one of the cofounders of Hawaii Regional Cuisine in the early 1990s. Mavrothalassitis is particularly known for individual pairings of wines with each dish in a multicourse meal. Life Mavrothalassitis was born in Provence, and moved to the United States in 1985. In 1988 he came to Hawaii when he was recruited to be the executive chef of ''La Mer'' at the Halekulani Hotel in Honolulu, Hawaii. From 1995-1998 he was executive chef of the Four Seasons Hotel in Maui, and the chef de cuisine of ''Seasons Restaurant''. In 1998 he opened his own restaurant, named for his nickname, Chef Mavro in Honolulu, at 1969 South King Street. In April 2007, Mavrothalassitis opened Cassis, a casual dining restaurant with French and Hawaiian influences, also in Honolulu, which closed after ten months. Malasada
A malasada ( pt, malassada, from "'' mal- assada''" = "badly-baked"; similar to filhós), sometimes called "Portuguese fried dough," is a Portuguese confection. It is a fried type of doughnut, made of flattened rounds of yeast dough, flavoured with lemon zest and coated with granulated sugar and cinnamon. The traditional Portuguese malasadas do not contain holes or any type of filling, but some variations do, especially the ones made in Hawaii. Some cream fillings include coconut, passion fruit, guava, pineapple and custard. Malasadas are often eaten on Mardi Gras - the day before Ash Wednesday. Alan Wong
Alan Wong is a chef and restaurateur known as one of 12 co-founders (along with Sam Choy, Roy Ambel Yamaguchi, Peter Merriman, Bev Gannon and more) of Hawaii Regional Cuisine. They came together to form an organization to create a new American regional cuisine, highlighting Hawaii's locally grown ingredients and diverse ethnic styles. In 1994 they all came together and compiled a cookbook, ''The New Cuisine of Hawaii'', to be sold for charity. Wong and Choy are alumni of the Kapiolani Community College Culinary Arts program. Sam Choy
Sam Choy Sr. is an American chef, restaurateur, and television personality known as a founding contributor of Pacific Rim cuisine. Biography Choy is the son of a Chinese father, Hung Sam Choy, and a German–Hawaiian mother, Clairemoana. He grew up in Laie, Oahu. Choy is an alumnus of the Kapiolani Community College's Culinary Arts program. One of his first jobs as a chef was at The Waldorf-Astoria Hotel in New York City. He would then return to Hawaii, where he eventually opened a chain of restaurants. Choy helped develop and popularize Hawaii regional cuisine. In 1991, Choy founded the Poke Festival and Recipe Contest.
