Fran Bigelow
Fran's Chocolates, or Fran's, is a chocolate company founded by Fran Bigelow and based in Seattle, Washington. The company is best known for their salted chocolate-covered caramels. Fran's Chocolates has locations in the Seattle metropolitan area and throughout Japan. History Fran Bigelow was born and raised in Seattle and trained as an accountant. She graduated from the University of Washington in 1965 with a degree in business administration and travelled to France with her husband about five years later. Her husband was a hospital administrator, and his career required them to move to San Francisco. Bigelow enrolled in professional cooking classes at California Culinary Academy, where she apprenticed with a Swiss pastry chef. Chocolate
Chocolate is a food made from roasted and ground cacao seed kernels that is available as a liquid, solid, or paste, either on its own or as a flavoring agent in other foods. Cacao has been consumed in some form since at least the Olmec civilization (19th-11th century BCE), and the majority of Mesoamerican people ─ including the Maya and Aztecs ─ made chocolate beverages. The seeds of the cacao tree have an intense bitter taste and must be fermented to develop the flavor. After fermentation, the seeds are dried, cleaned, and roasted. Capitol Hill is a densely populated residential district in Seattle, Washington, United States. One of the city's most popular nightlife and entertainment districts, it is home to a historic gay village and vibrant counterculture community. The James Beard Foundation Awards are annual awards presented by the James Beard Foundation to recognize chefs, restaurateurs, authors and journalists in the United States.
