This glossary of winemaking terms lists some of terms and definitions involved in making wine, fruit wine, and mead. A ;Acetaldehyde : The main aldehyde found in wines, most notably Sherry. ;Acetic acid : One of the primary volatile acids in wine. ;Acetification : The process through which acetic acid is produced in wine. ;Acetobacter : A bacterium found in wine that causes acetification resulting in the conversion of wine to vinegar. ;Acidity : The quality of wine that gives it its crispiness and vitality. A proper balance of acidity must be struck with the other elements of a wine, or else the wine may be said to be too sharp – having disproportionately high levels of acidity – or too flat – having disproportionately low levels of acidity. The three main acids found in wine are tartaric acid, malic acid and lactic acid. Winemaking
Winemaking or vinification is the production of wine, starting with the selection of the fruit, its fermentation into alcohol, and the bottling of the finished liquid. The history of wine-making stretches over millennia. The science of wine and winemaking is known as oenology. A winemaker may also be called a vintner. The growing of grapes is viticulture and there are many varieties of grapes. Winemaking can be divided into two general categories: still wine production (without carbonation) and sparkling wine production (with carbonation – natural or injected). Red wine, white wine, and rosé are the other main categories. Although most wine is made from grapes, it may also be made from other plants. (See fruit wine.)
