Eggslut (stylized as eggslut) is a sandwich restaurant chain with locations in Los Angeles, Las Vegas, Tokyo, Seoul, Kuwait, London and Singapore, known for its signature dish "The Slut", a coddled egg on pureed potatoes, as well as their egg sandwiches. It was founded by Alvin Cailan. History Eggslut's name refers to a chef who adds an egg to everything to make it better. Alvin Cailan
Alvin Cailan (born 1983) is an American chef, author, and television host; of Filipino-American ethnicity. He is the host of First We Feast’s The Burger Show which airs on YouTube and Hulu. Cailan launched Eggslut, a food truck that specialized in egg sandwiches. The food truck quickly became popular and often had waits that stretched to two hours long. Eggslut has brick-and-mortar locations, including at Los Angeles' Grand Central Market and Venice, Glendale, and Las Vegas. Cailan was named the head chef of Umami Burger in 2021. Coddled Egg
In cooking, coddled eggs are eggs that have been cracked into a ramekin or other small container, placed in a water bath or bain-marie and gently or lightly cooked just below boiling temperature. They can be partially cooked, mostly cooked, or hardly cooked at all (as in the eggs used to make Caesar salad dressing, which are only slightly poached for a thicker end-product). Poached eggs are similar to coddled egg but cooked by submersion in water, rather than being placed in a water bath. Method The egg is broken into an , porcelain cup or ramekin with a lid, and cooked using a bain-marie. The inside of the egg coddler is first buttered in order to flavor the egg and allow it to be removed more easily.
