Dock Pudding
Dock pudding is a distinctive West Yorkshire dish produced chiefly in the Calder Valley area. Its main ingredients are the leaves of bistort (sometimes called "gentle dock" or "Passion dock", though it is not a member of the genus ''Rumex''), together with oatmeal, nettles, onion, and seasoning to taste. Other ingredients are added but each personal family recipe does differ. Traditionally the "pudding" is fried in a frying pan along with bacon. Starting in 1971, an annual World Dock Pudding Championship is held at the local community centre in the village of Mytholmroyd. The dish is most strongly associated with Calderdale in modern times, but is not unique to that region in history. Tansy Cakes
Tansy was a traditional Easter food in medieval English cuisine. Its name came from the ''Tanacetum vulgare'' plant. The simplest version of the recipe was made by baking a batter flavored with green tansy juice. Later recipes, like the one from the 16th-century ''Good Housewife's Handbook'' added more ingredients like parsley, feverfew and violets to an egg batter that was fried like pancakes, though with a slightly green coloring from the addition of tansy and other herbs. Baked tansy could also be given a green color by adding spinach juice. An 18th-century recipe from ''The Compleat Housewife'' added sack to the batter and sweetened the fried tansies with gooseberries and a topping of crushed sugar. Mytholmroyd
Mytholmroyd (pronounced ) is a large village in the Upper Calder Valley in West Yorkshire, England, east of Hebden Bridge. It lies east of Burnley and west of Halifax. The village, which has a population of approximately 4,000 is in the Luddendenfoot Ward of Calderdale Council and forms part of the Hebden Royd parish. The village holds regular markets.
