The Culinary Institute Lenotre (CIL) is a French-owned Culinary College in the US located in Houston, Texas, and was founded in 1998 by Alain Lenotre, son of the acclaimed French pastry chef Gaston Lenôtre (1920 - 2009), and his wife, Marie Lenotre. The school is specialized in culinary arts, baking & pastry arts, hotel & restaurant management and Sommelier. The institute offers associate degrees and diploma as well as continuing education programs for professional and recreational cooking classes for non-professionals. The school also operates an onsite restaurant that doubles as a training application environment for its students: Le Bistro. In 2017, the Culinary Institute Lenotre has been named part of the 22 Best Culinary Schools in the US by FSR Magazine. Gaston Lenôtre (, born 28 May 1920, died 8 January 2009) was a French pastry chef. He is known as a possible creator of the opera cake (''gâteau opéra''), the founder of Lenôtre a culinary empire, whose brand includes restaurants, catering services, retail concerns and cooking schools, as well as one of the three founders with Paul Bocuse and Roger Verge of Les Chefs de France at Epcot in Orlando, Florida, US. Biography Lenôtre was born on a small farm in Normandy, in the commune of Saint-Nicolas-du-Bosc. Both of his parents eventually moved the family to Paris and became restaurant workers. Eventually, his father's ill health forced them to move back to the province from which they came. Lenôtre then had to struggle to find a position in a kitchen in Normandy. The American Culinary Federation (ACF) was established in 1929 in New York City and is the largest professional chefs' organization in North America. Roland Mesnier
Roland Mesnier (July 8, 1944 – August 26, 2022) was a French-born American pastry chef and culinary writer. His creations during his twenty-five years as Executive Pastry Chef (1980–2004) at the White House earned him the reputation of a creative genius. Career Mesnier was born into a family of nine children in the village of Bonnay, France. He first became interested in becoming a chef when he visited his brother's pastry shop in a nearby city. When he was fourteen, his mother secured an apprenticeship for him at a pastry shop in Besançon. He worked from 6am to 8pm six days a week, and in exchange received 300 francs a month, plus room and board, in addition to cooking lessons.
