Chateau Woltner, formerly Nouveau Medoc Vineyard, was a California wine estate located near Angwin, California in the Howell Mountain AVA within Napa Valley, which in the modern era was operational between 1980 and 2000 before its sale and merge into Ladera Vineyards. History The estate was established in 1877 by two Frenchmen, Jean Brun and W.J. California wine production has a rich viticulture history since 1680 when Spanish Jesuit missionaries planted ''Vitis vinifera'' vines native to the Mediterranean region in their established missions to produce wine for religious services. In the 1770s, Spanish missionaries continued the practice under the direction of the Father Junípero Serra who planted California's first vineyard at Mission San Juan Capistrano. Angwin is a census-designated place (CDP) in Napa County, California, best known as the site of Pacific Union College. It is part of the northern San Francisco Bay Area. The Howell Mountain AVA is an American Viticultural Area located within Napa Valley AVA of California. Location The AVA is located in the Howell Mountains within the Vaca Range on the northeast side of Napa Valley around the town of Angwin, and overlooks the town of St. Helena, California. Napa Valley is an American Viticultural Area (AVA) located in Napa County in California's Wine Country. It was established by the Bureau of Alcohol, Tobacco and Firearms (ATF) on January 27, 1981. Malolactic conversion (also known as malolactic fermentation or MLF) is a process in winemaking in which tart-tasting malic acid, naturally present in grape must, is converted to softer-tasting lactic acid. Malolactic fermentation is most often performed as a secondary fermentation shortly after the end of the primary fermentation, but can sometimes run concurrently with it.
