Chateau Woltner, formerly Nouveau Medoc Vineyard, was a California wine estate located near Angwin, California in the Howell Mountain AVA within Napa Valley, which in the modern era was operational between 1980 and 2000 before its sale and merge into Ladera Vineyards. California wine production has a rich viticulture history since 1680 when Spanish Jesuit missionaries planted ''Vitis vinifera'' vines native to the Mediterranean region in their established missions to produce wine for religious services. Angwin is a census-designated place (CDP) in Napa County, California, best known as the site of Pacific Union College. It is part of the northern San Francisco Bay Area. The population was 3,051 at the 2010 census. Its area code is 707. Its two zip codes are 94508 and 94576. It is in the Pacific time zone. Napa Valley is an American Viticultural Area (AVA) located in Napa County in California's Wine Country. It was established by the Bureau of Alcohol, Tobacco and Firearms (ATF) on January 27, 1981. Malolactic conversion (also known as malolactic fermentation or MLF) is a process in winemaking in which tart-tasting malic acid, naturally present in grape must, is converted to softer-tasting lactic acid. Malolactic fermentation is most often performed as a secondary fermentation shortly after the end of the primary fermentation, but can sometimes run concurrently with it. The process is standard for most red wine production and common for some white grape varieties such as Chardonnay, where it can impart a "buttery" flavor from diacetyl, a byproduct of the reaction.
