Chen Kenmin
Chen Kenmin ( zh, s=陈建民, t=陳建民, p=Chén Jiànmín; ja, 陳 建民, ''Chin Kenmin''; June 27, 1912 – May 12, 1990) was a Chinese-born Japanese chef known as the father of Chen Kenichi, the Iron Chef Chinese on the television show ''Iron Chef''. Born in Yibin, Sichuan, China, Chen emigrated to Japan in 1952 and became a Japanese citizen in 1954. Chen had originally specialized in Chinese imperial cuisine. However, in 1958, upon opening the restaurant in Japan, Chen arranged his dishes to cater to the tastes of his Japanese clients. Chen introduced Shanghai-style Sichuan cuisine to Japan through the ''Shisen Hanten'' Restaurant as well as through nationwide TV shows, particularly NHK's TV show, ''Kyō no ryōri'' ("Today's Cuisine" in English). Chen came to be known as the "father of Chinese Sichuan cooking" in Japan. Chen () () is a common Chinese-language surname and one of the most common surnames in Asia. It is the most common surname in Taiwan (2010) and Singapore (2000). Chen is also the most common family name in Guangdong, Zhejiang, Fujian, Macau, and Hong Kong. It is the most common surname in Xiamen, the ancestral hometown of many overseas Hoklo. Chili shrimp ( or ) is a dish of stir-fried shrimp in chilli sauce (which may use doubanjiang) in Chinese cuisine. It is a part of both Sichuan and Shanghai cuisines. In Japanese Chinese cuisine, ''ebi-chiri'' ( ja, エビチリ) is derived from Shanghai-style Sichuan cuisine. It consists of stir-fried shrimp in chilli sauce. It has a history in Japan. Mapo tofu () is a popular Chinese dish from Sichuan province. It consists of tofu set in a spicy sauce, typically a thin, oily, and bright red suspension, based on douban (fermented broad bean and chili paste), and douchi (fermented black beans), along with minced meat, traditionally beef. Variations exist with other ingredients such as water chestnuts, onions, other vegetables, or wood ear fungus. Japanese Chinese cuisine or ''Chūka'' is a style of Japanese cuisine served by Chinese restaurants popularized in Japan in the late 19th century and more recent times.
