Cheddar Cheese
Cheddar cheese (or simply cheddar) is a natural cheese that is relatively hard, off-white (or orange if colourings such as annatto are added), and sometimes sharp-tasting. Cheddar originates from the English village of Cheddar in Somerset. Cheddar cheese is produced all over the world, and ''cheddar cheese'' has no protected designation of origin either in the United Kingdom or the European Union. In 2007, the protected designation of origin name "West Country Farmhouse Cheddar" was registered in the EU and (after Brexit) the UK, defined as cheddar produced from local milk within Somerset, Dorset, Devon and Cornwall and manufactured using traditional methods. Protected Geographical Indication (PGI) was registered for ''Orkney Scottish Island Cheddar'' in 2013 in the EU, which also applies under UK law. Globally, the style and quality of cheeses labelled as cheddar may vary greatly, with some processed cheeses being packaged as "cheddar". Furthermore, certain cheeses that are sim ... Cheddar Yeo
The Cheddar Yeo is a small river in Somerset, England. Beneath the limestone of the Mendip Hills it forms the largest underground river system in Britain. After emerging into Cheddar Gorge it flows through the village of Cheddar, where it has been used in the past to power mills. From the Middle Ages until the 19th century the river had ports for seagoing vessels but is no longer navigable. Some of the water, which is of good quality, is diverted into Cheddar Reservoir to provide drinking water for Bristol. Course The Yeo rises from a spring near Charterhouse and then disappears under the Limestone of the Mendip Hills before reappearing in Gough's Cave before emerging into Cheddar Gorge. Within Gough's Cave the river forms the largest underground river system in Britain. From a point relatively close to the areas of the cave open to the public, the cave-divers' descent into Sump 1a begins through a tight passage known as Dire Straits. The bottom of that passage opens into the r ... [...More Info...]       [...Related Items...]     OR:     [Wikipedia]   [Google]   [Baidu]   |

Cheddaring
The manufacture of Cheddar cheese includes the process of ''cheddaring'', which makes this cheese unique. Cheddar cheese is named for the village of Cheddar in Somerset in South West England where it was originally manufactured. The manufacturing of this cheese has since spread around the world and thus the name has become generically known. Food ingredients used during manufacture Milk In general, the milk is raw milk (whole or 3.3%). The milk must be "ripened" before adding in the rennet. The term ''ripening'' means allowing the lactic acid bacteria (LAB) to turn lactose into lactic acid, which lowers the pH of the solution, greatly aiding in the coagulation of the milk. This is vital for the production of cheese curds that are later formed into cheddar. Rennet/chymosin/rennin Rennet is an enzyme, originally collected from the stomach of a milk-fed calf (natural rennet). This enzyme is responsible for the coagulation of the milk proteins to produce curds. Cheese produced th ... Money
Money is any item or verifiable record that is generally accepted as payment for goods and services and repayment of debts, such as taxes, in a particular country or socio-economic context. The primary functions which distinguish money are as a medium of exchange, a unit of account, a store of value and sometimes, a standard of deferred payment. Money was historically an emergent market phenomenon that possess intrinsic value as a commodity; nearly all contemporary money systems are based on unbacked fiat money without use value. Its value is consequently derived by social convention, having been declared by a government or regulatory entity to be legal tender; that is, it must be accepted as a form of payment within the boundaries of the country, for "all debts, public and private", in the case of the United States dollar. Contexts which erode public confidence, such as the circulation of counterfeit money or domestic hyperinflation, can cause good money to lose its value. ... Cheddar Gorge
Cheddar Gorge is a limestone gorge in the Mendip Hills, near the village of Cheddar, Somerset, England. The gorge is the site of the Cheddar show caves, where Britain's oldest complete human skeleton, Cheddar Man, estimated to be 9,000 years old, was found in 1903. Older remains from the Upper Late Palaeolithic era (12,000–13,000 years ago) have been found. The caves, produced by the activity of an underground river, contain stalactites and stalagmites. The gorge is part of a Site of Special Scientific Interest called Cheddar Complex. Cheddar Gorge, including the caves and other attractions, has become a tourist destination.
