Cheddar cheese (or simply cheddar) is a natural cheese that is relatively hard, off-white (or orange if colourings such as annatto are added), and sometimes sharp-tasting. Cheddar originates from the English village of Cheddar in Somerset. Cheddar cheese is produced all over the world, and ''cheddar cheese'' has no protected designation of origin either in the United Kingdom or the European Union. Cheddar, Somerset
Cheddar is a large village and civil parish in the Sedgemoor district of the English county of Somerset. It is situated on the southern edge of the Mendip Hills, north-west of Wells, south-east of Weston-super-Mare and south-west of Bristol. The civil parish includes the hamlets of Nyland and Bradley Cross. The parish had a population of 5,755 in 2011 and an acreage of as of 1961. Cheddar Gorge, on the northern edge of the village, is the largest gorge in the United Kingdom and includes several show caves, including Gough's Cave. The gorge has been a centre of human settlement since Neolithic times including a Saxon palace. It has a temperate climate and provides a unique geological and biological environment that has been recognised by the designation of several Sites of Special Scientific Interest. Cheddar Yeo
The Cheddar Yeo is a small river in Somerset, England. Beneath the limestone of the Mendip Hills it forms the largest underground river system in Britain. After emerging into Cheddar Gorge it flows through the village of Cheddar, where it has been used in the past to power mills. From the Middle Ages until the 19th century the river had ports for seagoing vessels but is no longer navigable. Some of the water, which is of good quality, is diverted into Cheddar Reservoir to provide drinking water for Bristol. The Cheddar Complex is a biological Site of Special Scientific Interest near Cheddar around the Cheddar Gorge and north east to Charterhouse in the Mendip Hills, Somerset, England, notified in 1952. The very large area includes 4 SSSIs formerly known as: Cheddar Gorge SSSI; August Hole/Longwood Swallet SSSI; GB Cavern Charterhouse SSSI; and Charterhouse on-Mendip SSSI. It is part owned by the National Trust, commercial landowners including the Marquess of Bath's Longleat Estate; and part managed by the Somerset Wildlife Trust. Cheddar Gorge
Cheddar Gorge is a limestone gorge in the Mendip Hills, near the village of Cheddar, Somerset, England. The gorge is the site of the Cheddar show caves, where Britain's oldest complete human skeleton, Cheddar Man, estimated to be 9,000 years old, was found in 1903. Older remains from the Upper Late Palaeolithic era (12,000–13,000 years ago) have been found. The caves, produced by the activity of an underground river, contain stalactites and stalagmites. The gorge is part of a Site of Special Scientific Interest called Cheddar Complex. Cheddar Gorge, including the caves and other attractions, has become a tourist destination.
