Bloater (herring)
Bloaters are a type of whole cold- smoked herring. Bloaters are "salted and lightly smoked without gutting, giving a characteristic slightly gamey flavour" and are particularly associated with Great Yarmouth, England. Popular in the 19th and early 20th centuries, the food is now described as rare. Bloaters are sometimes called Yarmouth bloater, or, jokingly, as a Yarmouth capon, two-eyed steak, or Billingsgate pheasant (after the Billingsgate Fish Market in London). The bloater is associated with England, while kippers share an association with Scotland and the Isle of Man (the Manx kipper). Bloaters are "salted less and smoked for a shorter time" while kippers are "lightly salted and smoked overnight"; both dishes are referred to as ''red herring''. Yarmouth Bloaters
The Yarmouth Bloaters were a motorcycle speedway team who operated from Yarmouth Stadium, Great Yarmouth from 1948 to 1962. History Speedway meetings had been taking place at Yarmouth Stadium since 1932. In 1948 the Yarmouth Bloaters speedway team were created and they joined the National League Division Three. The original plan was to use the name Yarmouth Mariners but the name was disliked by supporters and the name Bloaters was chosen because of the town's connections with the fishing industry. It was also the nickname of the local football team, Great Yarmouth Town F.C. The team's race jacket consisted of red and black quarters which then became red with black cross adorned with an image of a silver bloater. The team finished in 11th place in their inaugural league season. In 1949 the Bloaters finished joint top of Division Three with the Hanley Potters, but the Potters superior race points average meant that Yarmouth finished as runners up. ''Coregonus hoyi'', also known as the bloater, is a species or form of freshwater whitefish in the family Salmonidae. It is a silvery-coloured herring-like fish, long. It is found in most of the Great Lakes and in Lake Nipigon, and inhabits underwater slopes. This fish is not to be confused with the extinct deepwater cisco (''Coregonus johannae''), a large fish that shared a common name with the bloater. Description The bloater is a small, silvery-coloured whitefish with a pink and purple iridescence. It has a greenish tinge above, and a whitish belly. It is very similar to the kiyi, from which it may be distinguished by its lighter upper lip and smaller eye. The ciscoes (or ''ciscos'') are salmonid fish that differ from other members of the genus in having upper and lower jaws of approximately equal length and high gill raker counts. These species have been the focus of much study recently, as researchers have sought to determine the relationships among species that appear to have evolved very recently. The term ''cisco'' is also specifically used of the North American species ''Coregonus artedi'', also known as lake herring. In previous taxonomic classifications, the ciscoes have been identified as a subgenus ''Leucichthys'' of the genus ''Coregonus''.
