A Dutch baby pancake, sometimes called a German pancake, a Bismarck, a Dutch puff, or a Hootenanny, is a large American popover. A Dutch baby is similar to a large Yorkshire pudding. Unlike most pancakes, Dutch babies are baked in the oven, rather than being fried. They are generally thicker than most pancakes and contain no chemical leavening ingredients such as baking powder. They can be sweet or savory and can be served at any meal. The idea of a Dutch baby pancake may have been derived from the German '' Pfannkuchen'', but the current form originated in the US in the early 1900s. A Berliner is a German doughnut with no central hole, made from sweet yeast dough fried in fat or oil, with a marmalade or jam filling like a jelly doughnut, and usually icing, powdered sugar or conventional sugar on top. History Sugar was very costly until the 16th century, and early doughnuts were usually stuffed with savory fillings like cheese, meat and mushroom.
