Auguste Escoffier
Georges Auguste Escoffier (; 28 October 1846 – 12 February 1935) was a French chef, restaurateur and culinary writer who popularized and updated traditional French cooking methods. Much of Escoffier's technique was based on that of Marie-Antoine Carême, one of the codifiers of French ''haute cuisine''; Escoffier's achievement was to simplify and modernize Carême's elaborate and ornate style. In particular, he codified the recipes for the five mother sauces. Referred to by the French press as ''roi des cuisiniers et cuisinier des rois'' ("king of chefs and chef of kings"—also previously said of Carême), Escoffier was a preeminent figure in London and Paris during the 1890s and the early part of the 20th century. Nellie Melba
Dame Nellie Melba (born Helen Porter Mitchell; 19 May 186123 February 1931) was an Australian operatic dramatic coloratura soprano (three octaves). She became one of the most famous singers of the late Victorian era and the early 20th century, and was the first Australian to achieve international recognition as a classical musician. She took the pseudonym "Melba" from Melbourne, her home town. Melba studied singing in Melbourne and made a modest success in performances there. After a brief and unsuccessful marriage, she moved to Europe in search of a singing career. Richard D'Oyly Carte (; 3 May 1844 – 3 April 1901) was an English talent agent, theatrical impresario, composer, and hotelier during the latter half of the Victorian era. He built two of London's theatres and a hotel empire, while also establishing an opera company that ran continuously for over a hundred years and a management agency representing some of the most important artists of the day. Carte started his career working for his father, Richard Carte, in the music publishing and musical instrument manufacturing business.
