Alella (DO)
Alella is a Spanish Denominación de Origen (DO) (''Denominació d'Origen'' in Catalan) for wines produced in Maresme county in the province of Barcelona in the Spanish autonomous communities of Catalonia, located on the Mediterranean coast, 15 km to the north of the city of Barcelona. It is one of the smallest DOs in Spain as the vineyards have been encroached upon by urban development. At the present time it only covers one third of the area that it covered in 1956 when it was established,http://www.gencat.cat/diari/4585/06045138.htm (in Catalan) despite a territorial extension in 1989. Cabrils
Cabrils is a city and municipality in the comarca of Maresme in the province of Barcelona and autonomous community of Catalonia, Spain. It is situated between the municipalities of Vilassar de Mar, Vilassar de Dalt, Òrrius, Argentona and Cabrera de Mar, about ten kilometres from Mataró, the comarca capital. Argentona
Argentona is a municipality in the ''comarca'' of the Maresme in Catalonia, Spain. It is situated on the south-east side of the granite Litoral range, to the north-west of Mataró. The town is both a tourist centre and a notable horticultural centre. A local road links the municipality with Cabrera de Mar and with the main N-II road at Vilassar de Mar. The town centre has buildings in a wide range of styles. The late gothic church of Sant Julià was restored by Josep Puig i Cadafalch. Alella
Alella () is a village in the ''comarca'' of Maresme in Catalonia, Spain. It is situated on the coast on the southwest side of the granite Catalan Coastal Range. The town is known for its wines, cava and perfumes, but is also a commuter town for nearby Barcelona. Acidity Levels (wine)
The acids in wine are an important component in both winemaking and the finished product of wine. They are present in both grapes and wine, having direct influences on the color, balance and taste of the wine as well as the growth and vitality of yeast during fermentation and protecting the wine from bacteria. The measure of the amount of acidity in wine is known as the “ titratable acidity” or “total acidity”, which refers to the test that yields the total of all acids present, while strength of acidity is measured according to pH, with most wines having a pH between 2.9 and 3.9. Generally, the lower the pH, the higher the acidity in the wine. There is no direct connection between total acidity and pH (it is possible to find wines with a high pH for wine and high acidity).
