Actopan, Hidalgo
''Actopan'' ( Otomi: Ma’yüts’i) is a city and one of the 84 municipalities of Hidalgo, in central-eastern Mexico. The municipality covers an area of 280.1 km. It is crossed by the federal road that runs from Mexico City to Nuevo Laredo and it is located 30 km northwest of Pachuca, the capital city of the state of Hidalgo. Actopan is known as the city of the convent and the land of the barbecue. Its name derives from the word “Atoctli” meaning “firm, fertile, and humid land” and the word “pan” meaning “on” or “over” in Nahuatl. Thus, the name Actopan comes to mean “on the firm, humid, and fertile land”. Actopan’s original name in Otomi is “Ma'yüts'i” which translates to “my little pathway”. Barbacoa () is a form of cooking meat that originated in the Caribbean with the Taíno people, who called it by the Arawak word ''barbaca'', from which the term "barbacoa" derives, and ultimately, the word 'barbecue". In contemporary Mexico, it generally refers to meats or whole sheep or whole goats slow-cooked over an open fire or, more traditionally, in a hole dug in the ground covered with agave (''maguey'') leaves, although the interpretation is loose, and in the present day (and in some cases) may refer to meat steamed until tender. In 2010, Mexico celebrated both the 200th anniversary of its Independence and 100th anniversary of its Revolution. The entire year was proclaimed by President Felipe Calderón as "Año de la Patria", or "Year of the Nation". 16 September 1810 is the day of the "Grito de Dolores" or Miguel Hidalgo's call to take up arms against the Spanish colonial government.
