Xató
Xató () is a typical Catalan dish. It is a sauce made with almonds, hazelnuts, breadcrumbs, vinegar, garlic, olive oil, salt, and the nyora pepper. The sauce is often served with an endive salad prepared with anchovy, tuna and dried and salted cod (bacallà). The "Xató Route" is formed by the following Catalan towns: Canyelles, Calafell, Cubelles, Cunit, El Vendrell, Sant Pere de Ribes, Sitges and Vilanova i la Geltrú. Vilanova i la Geltrú () is the capital city of Garraf ''comarca'', in the province of Barcelona, Catalonia, Spain. Romesco () is a tomato-based sauce that originated from Valls, province of Tarragona, in Catalonia, Spain. The fishermen in this area made this sauce to be eaten with fish. It is typically made from any mixture of roasted tomatoes and garlic, toasted almonds, pine nuts, and/or hazelnuts, olive or sunflower oil, and ''nyora'' peppers (''capsicum annuum'', a sun-dried, small, round variety of red bell pepper). Flour or ground stale bread may be used as a thickener or to provide texture. Other common ingredients include sherry vinegar, red wine vinegar, and onions. Fernando Adrià Acosta (; born 14 May 1962) is a Spanish chef. He was the head chef of the El Bulli restaurant in Roses, Girona, Roses on the Costa Brava and is considered one of the best chefs in the world. He has often collaborated with his brother, the renowned pastry chef Albert Adrià. Career Ferran Adrià began his culinary career in 1980 during his stint as a dishwasher at the Hotel Playafels, in the town of Castelldefels. Penedès () is a natural region, natural and historical region of Catalonia.
