Mulling Spices
Mulling spices are a spice mixture used in drink recipes. The spices are usually added to hot apple cider, mulled wine, glögg, wassail, hippocras, and other drinks (such as juices) during autumn or winter. A "mulled" drink is a beverage that has been prepared with these spices (usually through heating in a pot with mulling spices and then straining). Mulling spices may also be added to the brewing process to make spiced beer. Allspice
Allspice, also known as Jamaica pepper, myrtle pepper, pimenta, or pimento, is the dried unripe berry of ''Pimenta dioica'', a midcanopy tree native to the Greater Antilles, southern Mexico, and Central America, now cultivated in many warm parts of the world. The name ''allspice'' was coined as early as 1621 by the English, who valued it as a spice that combined the flavours of cinnamon, nutmeg, and clove. Peel, also known as rind or skin, is the outer protective layer of a fruit or vegetable which can be peeled off. The rind is usually the botanical exocarp, but the term exocarp also includes the hard cases of nuts, which are not named peels since they are not peeled off by hand or peeler, but rather shells because of their hardness.
