Ma'amoul
Ma'amoul ( ) is a filled butter cookie made with semolina flour. It is popular throughout the Arab world. The filling can be made with dried fruits like figs, Phoenix dactylifera, dates, or Nut (fruit), nuts such as pistachios or walnuts, and occasionally almonds. Ma'amoul is usually made during the holidays of Easter, and a few days before Eid al-Fitr, Eid (then stored to be served with Arabic coffee and chocolate to guests who come during the holiday). It is popular throughout the Arab world, especially in the Arabian Peninsula. They may be in the shape of balls, domed or flattened cookies. They can either be decorated by hand or be made in special wooden moulds called ''tabe''. Kue makmur (Malay language, Malay: ''kuih makmur'', Jawi alphabet, Jawi: ; Bruneian Malay: ''kuih mor'') is a traditional Malay cuisine, Malay kue or kuih. This cake made from nuts in a powder form, ghee, flour and icing sugar. Its availability is limited to the bazaars of the month-long Ramadhan, and it is served to guests for Eid al-Fitr. Kue makmur is identified with its white colour and usually in a round shape. History The origin of kue makmur is somewhat uncertain and believed to be derived from the Middle Eastern ma'amoul that was introduced by Arab merchants throughout the Malay Archipelago. Since then, kue makmur has been a part of the traditional kue or kuih of Bruneian cuisine, Brunei, Indonesian cuisine, Indonesia, Malaysian cuisine, Malaysia and Singaporean cuisine, Singapore. Koloocheh or kleicha ( Persian: کلوچه), also known as Persian New Year bread, is a Persian stamped cookie or bread, originating in various parts of Iran. There are many variations on the recipe (bready texture vs. crispy; stuffed vs. unstuffed) made in Iran and in Persian diaspora communities, including in Eastern Europe and North America. About Typically, koloocheh are cookies filled with dates and walnuts, but they can be stuffed with grated coconut and additionally spiced with saffron, rose water, cardamom, cinnamon, or citrus zest. Kolompeh (Persian: کلمپه) is an Iranian pastry baked in the city of Kerman. Kolompeh looks like a pie with a mixture of minced dates with cardamom powder and other flavoring inside. Dates, wheat flour, walnuts and cooking oil are the main ingredients. Pistachios or sesame powder are often used for decorating kolompeh. Kleicha (; , ; ; ; ; ; ) is a type of Middle Eastern cookie. Kleicha comes in several traditional shapes and fillings. The most popular are the ones filled with dates (''kleichat tamur''). There are also sweet discs (''khfefiyyat''), as well as half moons filled with nuts, sugar and/or desiccated coconut (''kleichat joz''). They are usually flavoured with cardamom and sometimes rose water, and glazed with egg wash, which may sometimes be scented and coloured with saffron.
