This glossary of winemaking terms lists some of terms and definitions involved in making wine, fruit wine, and mead. A ;Acetaldehyde : The main aldehyde found in wines, most notably Sherry. ;Acetic acid : One of the primary volatile acids in wine. ; Acetification : The process through which acetic acid is produced in wine. ; Acetobacter : A bacterium found in wine that causes acetification resulting in the conversion of wine to vinegar. ; Acidity : The quality of wine that gives it its crispiness and vitality. A proper balance of acidity must be struck with the other elements of a wine, or else the wine may be said to be too sharp – having disproportionately high levels of acidity – or too flat – having disproportionately low levels of acidity. Winemaking
Winemaking, wine-making, or vinification is the production of wine, starting with the selection of the fruit, its Ethanol fermentation, fermentation into alcohol, and the bottling of the finished liquid. The history of wine-making stretches over millennia. There is evidence that suggests that the earliest wine production took place in Georgia and Iran around 6000 to 5000 B.C. Lactic Acid
Lactic acid is an organic acid. It has the molecular formula C3H6O3. It is white in the solid state and it is miscible with water. When in the dissolved state, it forms a colorless solution. Production includes both artificial synthesis as well as natural sources. Lactic acid is an alpha-hydroxy acid (AHA) due to the presence of a hydroxyl group adjacent to the carboxyl group. It is used as a synthetic intermediate in many organic synthesis industries and in various biochemical industries. The conjugate base of lactic acid is called lactate (or the lactate anion). The name of the derived acyl group is lactoyl. In solution, it can ionize by a loss of a proton to produce the lactate ion . Oak is used in winemaking to vary the color, flavor, tannins (wine), tannin profile and texture of wine. It can be introduced in the form of a barrel during the fermentation (wine), fermentation or aging barrel, aging periods, or as free-floating chips or stave (wood), staves added to wine fermented in a vessel like stainless steel. Cellular respiration is the process of oxidizing biological fuels using an inorganic electron acceptor, such as oxygen, to drive production of adenosine triphosphate (ATP), which stores chemical energy in a biologically accessible form.
