Viticulture (, "vine-growing"), viniculture (, "wine-growing"), or winegrowing is the cultivation and harvesting of grapes. It is a branch of the science of horticulture. In cell biology, the meristem is a structure composed of specialized tissue found in plants, consisting of stem cells, known as meristematic cells, which are undifferentiated cells capable of continuous cellular division. These meristematic cells play a fundamental role in plant growth, regeneration, and acclimatization, as they serve as the source of all differentiated plant tissues and organs. They contribute to the formation of structures such as fruits, leaves, and seeds, as well as supportive tissues like stems and roots. Apical Dominance
In botany, apical dominance is the phenomenon whereby the main, central stem of the plant is dominant over (i.e., grows more strongly than) other side stems; on a branch the main stem of the branch is further dominant over its own side twigs. Plant physiology describes apical dominance as the control exerted by the terminal bud (and shoot apex) over the outgrowth of lateral buds. Overview Apical dominance occurs when the shoot apex inhibits the growth of lateral buds so that the plant may grow vertically. It is important for the plant to devote energy to growing upward so that it can get more light to undergo photosynthesis. If the plant utilizes available energy for growing upward, it may be able to outcompete other individuals in the vicinity. Dormancy
Dormancy is a period in an organism's Biological life cycle, life cycle when growth, development, and (in animals) physical activity are temporarily stopped. This minimizes metabolism, metabolic activity and therefore helps an organism to conserve energy. Dormancy tends to be closely associated with Ecosystem, environmental conditions. Organisms can synchronize entry to a dormant phase with their Ecosystem, environment through predictive or consequential means. Predictive dormancy occurs when an organism enters a dormant phase ''before'' the onset of adverse conditions. For example, photoperiod and decreasing temperature are used by many plants to predict the onset of winter. In viticulture, ripeness is the completion of the ripening process of wine grapes on the vine which signals the beginning of harvest. What exactly constitutes ripeness will vary depending on what style of wine is being produced ( sparkling, still, fortified, ''rosé'', dessert wine, etc.) and what the winemaker and viticulturist personally believe constitutes ripeness. Polyphenols (wine)
Phenolic compounds— natural phenol and polyphenols—occur naturally in wine. These include a large group of several hundred chemical compounds that affect the taste, color and mouthfeel of wine. These compounds include phenolic acids, stilbenoids, flavonols, dihydroflavonols, anthocyanins, flavanol monomers (catechins) and flavanol polymers (proanthocyanidins). This large group of natural phenols can be broadly separated into two categories, flavonoids and non-flavonoids. Flavonoids include the anthocyanins and tannins which contribute to the color and mouthfeel of the wine. The non-flavonoids include the stilbenoids such as resveratrol and phenolic acids such as benzoic, caffeic and cinnamic acids. Anthocyanins
Anthocyanins (), also called anthocyans, are water-soluble vacuolar pigments that, depending on their pH, may appear red, purple, blue, or black. In 1835, the German pharmacist Ludwig Clamor Marquart named a chemical compound that gives flowers a blue color, Anthokyan, in his treatise "''Die Farben der Blüthen''" (English: The Colors of Flowers). Food plants rich in anthocyanins include the blueberry, raspberry, black rice, and black soybean, among many others that are red, blue, purple, or black. Some of the colors of autumn leaves are derived from anthocyanins. Anthocyanins belong to a parent class of molecules called flavonoids synthesized via the phenylpropanoid pathway. The annual growth cycle of grapevines is the process that takes place in the vineyard each year, beginning with bud break in the spring and culminating in leaf fall in autumn followed by winter dormancy. Anthesis
Anthesis is the period during which a flower is fully open and functional. It may also refer to the onset of that period. The onset of anthesis is spectacular in some species. In ''Banksia'' species, for example, anthesis involves the extension of the style far beyond the upper perianth parts.
