Daftmill Distillery
Daftmill Distillery is a single malt Scotch whisky distillery, located in a converted barn at Daftmill Farm in the Howe of Fife. The distillery was granted a licence by HMRC in 2005 to produce whisky and the first was produced on 16 December 2005. Built in a converted meal mill and using un-peated malt, Daftmill has a maximum production capacity of only 20,000 litres of alcohol per year, making it a very low-volume distillery. Its first release was introduced as Daftmill 2005 12–Year Inaugural Release. All the grain used in distillation is produced on the farm. Cupar ( ; gd, Cùbar) is a town, former royal burgh and parish in Fife, Scotland. It lies between Dundee and Glenrothes. Single malt Scotch refers to single malt whisky made in Scotland. To qualify for this category, a whisky must have been distilled at a single distillery using a pot still distillation process and made from a mash of malted barley. Therefore, a single malt means that the whisky has not been blended elsewhere with whisky from other distilleries. As with any Scotch whisky, a single malt Scotch must be distilled in Scotland and matured in oak casks in Scotland for at least three years, although most single malts are matured longer. Lowland single malts are single malt whiskies distilled in Scotland's lowlands.
