Belize is a country on the north-eastern coast of Central America. It is bordered by Mexico to the north, the Caribbean Sea to the east, and Guatemala to the west and south. It also shares a maritime boundary with Honduras to the southeast. Part of the Caribbean region, Belize is a member of the Caribbean Community (CARICOM) and the Commonwealth Caribbean, the historical British West Indies. The Maya civilization spread into the area of Belize between 1500 BCE and 300 CE and flourished until about 1200. European contact began in 1502–04 when Christopher Columbus sailed along the Gulf of Honduras. European exploration was begun by English settlers in 1638. Belize is the most sparsely populated nation in Central America. It is larger than El Salvador. Slightly more than half of the people live in rural areas. About one-fourth live in Belize City, the principal port, commercial centre, and former capital. About 80% of the population are Christian. Most Belizeans are of multiracial descent. About 52.9% of the population is of mixed Indigenous (mostly Maya) and European descent (or Mestizo), 24.9% are Kriols, about 10.6% are Maya, and about 6.1% are Afro-Amerindian ( Garifuna). Belizean cuisine is an amalgamation of all ethnicities in the nation of Belize and their respectively wide variety of foods. Breakfast often consists of sides of bread, flour tortillas, or fry jacks that are often homemade and eaten with various cheeses. All are often accompanied with refried beans, cheeses, and various forms of eggs, etc. Inclusive is also cereal along with milk, coffee, or tea. Midday meals vary, from lighter foods such as rice and beans, tamales, Empanada#Belize, panades (fried meat pies), escabeche (onion soup), chimole/chirmole (soup), stew chicken, garnaches (fried tortillas with beans, cheese, and diced onion sauce or diced cabbage) to various constituted dinners featuring some type of rice and beans, meat and salad or coleslaw.
