Mint Chocolate
Mint chocolate (or chocolate mint) is a popular type of chocolate, made by adding a mint flavoring, such as peppermint, spearmint, or crème de menthe, to chocolate. Mint chocolate can be found in a wide variety of edible products, such as candy, mints, cookies, mint chocolate chip ice cream, hot chocolate, and others. In addition, it is marketed in a non-edible form as cosmetics. Depending widely on the ingredients and the process used, mint chocolate can give off a very distinctive mint fragrance. The chocolate component can be milk chocolate, regular dark chocolate, or white chocolate; due to this, mint chocolate has no one specific flavor, and so each chocolate-plus-flavor combination can be unique. Ganache
Ganache (; ) is a glaze, icing, sauce, or filling for pastries, made from chocolate and cream. Preparation Ganache is a chocolate preparation, normally made by heating equal parts by weight of cream and chopped chocolate, warming the cream first, then pouring it over the chocolate. The mixture is then typically left to rest for a short period (between 3 and 10 minutes generally, dependent on volume) before it is stirred or blended until smooth, with liqueurs or extracts added if desired. The resting period allows the hot cream to increase the temperature of the bowl and its contents. If one were to blend immediately this would introduce air reducing the temperature and preventing the chocolate from melting consistently. Butter is generally added to give the ganache a shiny appearance and smooth texture. Haviland Thin Mints
Haviland Thin Mints are a chocolate-covered mint candy produced by Log House Foods of Plymouth, Minnesota. The candy is a mint fondant covered in dark chocolate, similar to the York Peppermint Pattie but smaller, thinner and shorter. The brand dates its origins to at least World War II, when it was one of the candies supplied to U.S. soldiers (made by Miller and Hollis). Haviland Thin Mints and related brands were acquired in 1961 by Deran which was in turn itself acquired in 1970 by Borden which manufactured them for over twenty years. After Eight Mint Chocolate Thins, often referred to as simply "After Eights", are a brand of mint chocolate covered sugar confectionery. They were created by Rowntree Company Limited in the UK in 1962 and have been manufactured by Nestlé since its acquisition of Rowntree in 1988.
