Tomato And Egg Soup
Tomato and egg soup ( or ) is a dish from China consisting mainly of tomato and egg. It is a relatively easy soup to make, and as such is one of the most popular soups in households. This soup is also high in nutritional value, consisting of ingredients such as lycopene from the tomatoes, which can reduce the possibility of cancer.''Shanghai: city guide''
Damian Harper, David Eimer, p.257 Normally, the soup is made from coarsely chopped tomatoes, and green onions chopped to pieces of about of 0.5 cm. Half a litre of water is used in this soup, and a small amount of oil. Eggs are added toward the end of this dish, and stirred in for only about 3 minutes. It is normally covered for 2 minutes, and then served when the egg has set. This soup is also sometimes made with the tomato skin removed, and is sometimes cooked for a ...

Tomato Sauce
Tomato sauce (also known as ''salsa roja'' in Spanish or ''salsa di pomodoro'' in Italian) can refer to many different sauces made primarily from tomatoes, usually to be served as part of a dish, rather than as a condiment. Tomato sauces are common for meat and vegetables, but they are perhaps best known as bases for sauces for Mexican salsas and Italian pasta dishes. Tomatoes have a rich flavor, high water content, soft flesh which breaks down easily, and the right composition to thicken into a sauce when stewed without the need of thickeners such as roux or masa. All of these qualities make them ideal for simple and appealing sauces. In countries such as the United Kingdom, India, Australia, New Zealand, and South Africa, the term ''tomato sauce'' is used to describe a condiment similar to what Americans call tomato ketchup. In some of these countries, both terms are used for the condiment. History The first European person to write about, what may have been, tomato sauce w ...

Tomato Purée
Tomato purée is a thick liquid made by cooking and straining tomatoes. The difference between tomato paste, tomato purée, and tomato sauce is consistency; tomato puree has a thicker consistency and a deeper flavour than sauce. Differences The definitions of tomato purée vary from country to country. In the U.S., tomato purée is a processed food product, usually consisting of only tomatoes, but can also be found in the seasoned form. It differs from tomato sauce or tomato paste in consistency and content; tomato purée generally lacks the additives common to a complete tomato sauce and does not have the thickness of paste. The standard consistency of tomato puree is more than or equal to 7% but less than 24% natural total soluble solids. Passata di pomodoro ''Passata di pomodoro'' is an uncooked tomato purée, strained of seeds and skins. Passata is from the Italian verb passare, "to go through". Tomato Paste
Tomato paste is a thick paste made by cooking tomatoes for several hours to reduce the water content, straining out the seeds and skins, and cooking the liquid again to reduce the base to a thick, rich concentrate. It is used to impart an intense tomato flavour to a variety of dishes, such as pasta, soups and braised meat. It is used heavily in Italian cultured food. By contrast, tomato purée is a liquid with a thinner consistency than tomato paste, while tomato sauce is even thinner in consistency. History and traditions Tomato paste is traditionally made in parts of Sicily, southern Italy and Malta by spreading out a much- reduced tomato sauce on wooden boards that are set outdoors under the hot August sun to dry the paste until it is thick enough, when it is scraped up and held together in a richly colored, dark ball. Today, this artisan product is harder to find than the industrial version (which is much thinner). Commercial production uses tomatoes with thick pericarp wa ...

Tomato Jam
Tomato jam (also referred to as tomato jelly) is a type of fruit preserve prepared with tomatoes and sugar. Overview Green tomatoes are used in some preparations. Some preparations may use honey, and some include bacon. It has been described as "a cross between marmalade and ketchup". Some commercially prepared varieties are produced. It is sometimes used in the preparation of sandwiches similar to a BLT, using the jam in place of tomato. Tomato jam has been described a popular condiment in South Africa. History In 1840 in the United States, a recipe was published in the ''American Farmer'' that involved straining stewed tomatoes through cloth, adding an equal amount of sugar, and then boiling the mixture for a few hours. In 1843 in the U.S., a recipe for preparing tomato jam was published in the ''Boston Cultivator''. The preparation process included rubbing stewed tomatoes through a sieve, adding an equal amount of sugar, and then stewing the mixture into a jam. See also ...

Sun-dried Tomato
Sun-dried tomatoes are ripe tomatoes that lose most of their water content after spending a majority of their drying time in the sun. These tomatoes are usually pre-treated with sulfur dioxide or salt before being placed in the sun in order to improve colour and appearance. Typically, tomatoes spend 4–10 days in the sun in order for the sun-drying process to be complete. Cherry tomatoes will lose 88% of their initial (fresh) weight, while larger tomatoes can lose up to 93% during the process. As a result, it takes anywhere from 8 to 14 kilograms of fresh tomatoes to make a single kilogram of sun-dried tomatoes. After the procedure, the tomato fruits will keep their nutritional value. The tomatoes are high in lycopene, antioxidants, and vitamin C. The final products may contain up to 2–6% of salt and could provide a significant contribution to the day's intake. Sun-dried tomatoes can be used in a wide variety of recipes and come in a variety of shapes, colors, and types of to ...

Ketchup
Ketchup or catsup is a table condiment with a sweet and tangy flavor. The unmodified term ("ketchup") now typically refers to tomato ketchup, although early recipes used egg whites, mushrooms, oysters, grapes, mussels, or walnuts, among other ingredients. Tomato ketchup is made from tomatoes, sugar, and vinegar, with seasonings and spices. The spices and flavors vary, but commonly include onions, allspice, coriander, cloves, cumin, garlic, and mustard, and sometimes include celery, cinnamon, or ginger. The market leader in the United States (60% market share) and the United Kingdom (82%) is Heinz Tomato Ketchup. Tomato ketchup is most often used as a condiment to dishes that are usually served hot and are fried or greasy: french fries and other potato dishes, hamburgers, hot dogs, chicken tenders, hot sandwiches, meat pies, cooked eggs, and grilled or fried meat. Ketchup is sometimes used as the basis for, or as one ingredient in, other sauces and dressings, and the flavo ...

Canned Tomato
Canned tomatoes, or tinned tomatoes, are tomatoes, usually peeled, that are sealed into a can after having been processed by heat. Variants Canned tomatoes are available in several different forms. The traditional forms are whole peeled tomatoes, packed in juice or purée, and ground tomatoes, sometimes referred to as "kitchen-ready." Ground tomatoes are not to be confused with purée, which is similar but more cooked. Taste tests indicate that whole tomatoes packed in juice tend to be perceived as fresher-tasting than those packed in purée. Crushed tomatoes, commonly used for pasta sauces, are made by adding ground tomatoes to a heavy medium made from tomato paste. Diced tomatoes have become increasingly common for applications where a chunkier or more substantial product is needed. In recent years, the Petite Diced form (3/8" cut pieces) has become the fastest growing segment of canned tomatoes. Usage In areas and situations where in-season, perfectly ripe tomatoes are not a ...
