Specialty Coffee
Specialty coffee is a term for the highest grade of coffee available, typically relating to the entire supply chain, using single origin or single estate coffee. The term was first used in 1974 by Erna Knutsen in an issue of ''Tea & Coffee Trade Journal''. Knutsen used ''specialty coffee'' to describe beans of the best flavor which are produced in special micro-climates. Specialty coffee is related to the farmers and the brewer what is known as the third wave of coffee, especially throughout North America. This refers to a modern demand for exceptional quality coffee, both farmed and brewed to a significantly higher than average standard. Definition The widely accepted definition of specialty coffee is coffee scoring 80 points or above on the 100-point scale used on the Specialty Coffee Association Cupping form. Single-origin Coffee
Single-origin coffee is coffee grown within a single known geographic origin. Single-origins can offer unique characteristics and specific tastes when compared to blended coffees from multiple origins. Coffee shops can market single-origin coffees specifically to add symbolic value to the coffee by highlighting the producer or the coffee's unique origin. Consumers of specialty coffee are often attracted to single-origin coffee for the transparency it often attempts to convey. There are no universal rules or governing body enforcing the labeling of coffee. Third-wave coffee is a movement in coffee marketing emphasizing high quality. Beans are typically sourced from individual farms and are roasted more lightly to bring out their distinctive flavors. Though the term was coined in 1999, the approach originates in the 1970s, with roasters such as the Coffee Connection. Specialty Coffee Association Of America
The Specialty Coffee Association of America (SCAA), founded in 1982, was a non-profit trade organization for the specialty coffee industry. With members located in more than 40 countries, SCAA represented different segments of the specialty coffee industry, including producers, roasters, importers/exporters and retailers. In 2005, management discovered that former Chief Operating Officer Scott Welker had embezzled more than $465,000. SCAA members contributed a quarter of a million dollars beyond their membership dues to keep the organization running. In 2009, the U.S. Federal Court in Santa Ana, California sentenced Welker to 33 months in federal prison.
