Sheep Milk
Sheep's milk (or ewes' milk) is the milk of domestic sheep. It is commonly used to make cultured dairy products such as cheese. Some of the most popular sheep cheeses include feta (Greece), ricotta (Italy), and Roquefort (France). Sheep breeds Specialized dairy breeds of sheep yield more milk than other breeds. Common dairy breeds include: * East Friesian (Germany) * Sarda (Italy) * Lacaune (France) * British Milk Sheep (UK) * Chios (Greece) * Awassi (Syria) * Assaf (Israel) * Zwartbles (Friesland, Netherlands) In the U.S., the most common dairy breeds are the East Friesian and the Lacaune. Katahdin Sheep
The Katahdin is a breed of domestic sheep developed by breeder Michael Piel in Maine, United States. He named this new breed after Mount Katahdin - the state’s highest peak. The breed was developed during the second half of the 20th century by crossing selected St. Croix sheep from the Virgin Islands with various other breeds, including the Suffolk. Lambs were selected based on hair coat, meat-type conformation, high fertility, and flocking instinct. The Katahdin sheep breed was the first in the United States to reach sheep industry standards of carcass quality.The average Katahdin ewe weight is 120 to 160 pounds and the ram's weight is 180 to 250. Most Katahdin ewes will have a 200% lamb crop. The Katahdin sheds its winter coat, so does not have to be sheared. Pag Cheese
Pag cheese or Pag Island cheese ( hr, Paški sir, ) is a Croatian variety of hard, distinctively flavored sheep milk cheese originating from the Adriatic island of Pag. It is generally regarded as the most famous of all artisan cheeses made in the country and can be found in many markets outside Croatia. History In 1774, the travel writer Alberto Fortis, on his way to Dalmatia, wrote about Pag island's products, including sea salt, sage honey, wool and Pag cheese. Until early in the 20th century, the inhabitants of Pag had their own dry stone huts in which they milked the sheep and made Pag cheese.
