Matapa is a typical Mozambican dish, prepared with young cassava leaves, which are usually ground in a large wooden mortar and pestle before cooked with garlic, onion and coconut milk. Vatapá
Vatapá (Yoruba: vata'pa, ) is an Afro-Brazilian dish made from bread, shrimp, coconut milk, finely ground peanuts and palm oil mashed into a creamy paste. It is a typical food of Salvador, Bahia and it is also common to the North and Northeast regions of Brazil. In the northeastern state of Bahia it is commonly eaten with ''acarajé'', and as a ritual offering in Candomblé, with acaçá or acarajé. Vatapá is often eaten with white rice in other regions of Brazil. The shrimp can be replaced with ground tuna, chicken or cod among other options. Cuisine Of Mozambique
The cuisine of Mozambique has deeply been influenced by the Portuguese, who introduced new crops, flavorings, and cooking methods. The staple food for many Mozambicans is ''xima'' (chi-mah), a thick porridge made from maize/corn flour. Cassava and rice are also eaten as staple carbohydrates. All of these are served with sauces of vegetables, meat, beans or fish. Other typical ingredients include cashew nuts, onions, bay leaves, garlic, coriander, paprika, pepper, red pepper, sugar cane, corn, millet, sorghum and potatoes. The cashew tree (''Anacardium occidentale'') is a tropical evergreen tree native to South America in the genus ''Anacardium'' that produces the cashew seed and the cashew apple accessory fruit. The tree can grow as tall as , but the dwarf cultivars, growing up to , prove more profitable, with earlier maturity and greater yields. Shrimp
