Hardtack
Hardtack (or hard tack) is a type of dense Cracker (food), cracker made from flour, water, and sometimes salt. Hardtack is inexpensive and long-lasting. It is used for sustenance in the absence of perishable foods, commonly during long sea voyages, land migrations, and military campaigns. Along with salt pork and corned beef, hardtack was a Field ration, standard ration for many militaries and navies from the 17th to the early 20th centuries. A cracker is a flat, dry baked biscuit typically made with flour. A water biscuit (Commonwealth English) or water cracker (American English) is a type of savoury cracker. They are thin, hard and brittle, and usually served with cheese or wine. Salt Pork
Salt pork is salt-cured pork. It is usually prepared from pork belly, or, less commonly, fatback. Salt pork typically resembles uncut side bacon, but is fattier, being made from the lowest part of the belly, and saltier, as the cure is stronger and performed for longer, and never smoked. The fat on the meat is necessary for the curing process as it allows the salt to soak in and preserve the meat.
