Bún Mắm
''Bún mắm'' is a fermented thick Vietnamese vermicelli soup sometimes called "Vietnamese gumbo." Etymology Food reviewer Mike Sula explains, "''Bun'' refers to the steamed rice vermicelli, which can be a bit mushy. But the key to this soup is the ''mam'', as in ''mam ca loc'' (fermented fish paste) or ''mam tom'' (fermented shrimp paste), a murky purple slurry that on its own is one of the most odoriferous substances this side of a tannery fire. But added judiciously to soups or stir-fries it provides the elusive element of deep rounded flavor that puts the ''mam'' in ''umami''." Umami ( from ja, 旨味 ), or savoriness, is one of the five basic tastes. It has been described as savory and is characteristic of broths and cooked meats. People taste umami through taste receptors that typically respond to glutamates and nucleotides, which are widely present in meat broths and fermented products.
