Sweet Potato Pie
Sweet potato pie is a traditional dessert, originating in the Southern United States. It is often served during the American holiday season, especially at Thanksgiving and Christmas in place of pumpkin pie, which is more traditional in other regions of the United States. It is made in an open pie shell without a top crust. The filling consists of mashed sweet potatoes, evaporated milk, sugar, spices such as nutmeg, and eggs. Other possible ingredients include vanilla or lemon extracts. The baked custard filling may vary from light and silky to dense, depending on the recipe's ratio of sweet potato, milk and eggs. History Though creamy vegetable pie recipes date back to Medieval Europe, sweet potato pie appears in the southern United States from the early colonial days. The use of sweet potatoes in Southern and African-American cuisine traces back to Native American cuisine. The sweet potato, which is native to the Americas, was likely used by African slaves as an alternative t ...

Yam (vegetable)
Yam is the common name for some plant species in the genus '' Dioscorea'' (family Dioscoreaceae) that form edible tubers. Yams are perennial herbaceous vines cultivated for the consumption of their starchy tubers in many temperate and tropical regions, especially in West Africa, South America and the Caribbean, Asia, and Oceania. The tubers themselves, also called "yams", come in a variety of forms owing to numerous cultivars and related species. Yams were independently domesticated on three different continents: Africa (''Dioscorea rotundata''), Asia (''Dioscorea alata''), and the Americas (''Dioscorea trifida''). Etymology The name "yam" appears to derive from Portuguese ''inhame'' or Canarian (Spain) ''ñame'', which derived from West African languages during trade. However in both languages, this name commonly refers to the taro plant (''Colocasia esculenta'') from the genus ''Colocasia'', as opposed to '' Dioscorea''. The main derivations borrow from verbs me ...

Custard Desserts
Custard is a variety of culinary preparations based on sweetened milk, cheese, or cream cooked with egg or egg yolk to thicken it, and sometimes also flour, corn starch, or gelatin. Depending on the recipe, custard may vary in consistency from a thin pouring sauce (''crème anglaise'') to the thick pastry cream (''crème pâtissière'') used to fill éclairs. The most common custards are used in custard desserts or dessert sauces and typically include sugar and vanilla; however, savory custards are also found, e.g., in quiche. Custard is usually cooked in a double boiler (bain-marie), or heated very gently in a saucepan on a stove, though custard can also be steamed, baked in the oven with or without a water bath, or even cooked in a pressure cooker. Custard preparation is a delicate operation, because a temperature increase of 3–6 °C (5–10 °F) leads to overcooking and curdling. Generally, a fully cooked custard should not exceed 80 °C (~175 °F); ...

Cuisine Of The Southern United States
The cuisine of the Southern United States encompasses diverse food traditions of several regions, including Tidewater, Appalachian, Lowcountry, Cajun, Creole, and Floribbean cuisine. In recent history, elements of Southern cuisine have spread to other parts the United States, influencing other types of American cuisine. Many elements of Southern cooking—tomatoes, squash, corn (and its derivatives, such as hominy and grits), and deep-pit barbecuing—are borrowings from indigenous peoples of the region (e.g., Cherokee, Caddo, Choctaw, and Seminole). From the Old World, European colonists introduced sugar, flour, milk, eggs, and livestock, along with a number of vegetables; meanwhile, enslaved West Africans trafficked to the North American colonies through the Atlantic slave trade introduced black-eyed peas, okra, rice, eggplant, sesame, sorghum, melons, and various spices. Rice became prominent in many dishes in the Lowcountry region of South Carolina due to the ...

Sweet Pies
Sweetness is a basic taste most commonly perceived when eating foods rich in sugars. Sweet tastes are generally regarded as pleasurable. In addition to sugars like sucrose, many other chemical compounds are sweet, including aldehydes, ketones, and sugar alcohols. Some are sweet at very low concentrations, allowing their use as non-caloric sugar substitutes. Such non-sugar sweeteners include saccharin and aspartame. Other compounds, such as miraculin, may alter perception of sweetness itself. The perceived intensity of sugars and high-potency sweeteners, such as Aspartame and Neohesperidin Dihydrochalcone, are heritable, with gene effect accounting for approximately 30% of the variation. The chemosensory basis for detecting sweetness, which varies between both individuals and species, has only begun to be understood since the late 20th century. One theoretical model of sweetness is the multipoint attachment theory, which involves multiple binding sites between a sweetness rec ...

Pie In American Cuisine
Pie in American cuisine has roots in English cuisine and has evolved over centuries to adapt to American cultural tastes and ingredients. The creation of flaky pie crust shortened with lard is credited to American innovation. American cuisine in the colonial era was simple compared with the more elaborate dishes found in contemporaneous European cuisines. The simplicity of American cuisine, and the American preference for pies, was influenced by the religious culture and general circumstances of the colonial era. As European pies evolved into dainty tarts, the American "pot pie", cooked over the hearth in a Dutch oven, was generous and filling, reflecting American preferences for simple and hearty meals. Background Although borrowed from English cuisine, pies have over generations been adapted by American cooks to the ingredients and culture of the United States. Harriet Beecher Stowe observed: The pie is an English institution, which, planted on American soil, forthwith ra ...
